We use the victorinox brand!
Can you use the whole chuck roll for stewed meat?? Or would that be a waste?
We think there are too many great cuts for it to be used all for stew meat, but that would be an excellent tasting stew meat.
Leave the fat on. Thats good stuff

Does any customer ever ask for the Sierra steak?
We have plenty asking about the Flank Steak, we aren't familiar with the Sierra Steak.

We trim what we want for our meat case and then offer custom!
