I do not want to pay upwards of $12-$18 for a dish of food where half or more has been cooked days ago, then frozen or refrigerated, then reheated and served. If I wanted leftovers, I'd have just stayed home.
Yeah, that’s something that you expect out of fast food places. But at least with fast food, the prices usually reflect the quality. You KNOW it’s not fresh nor healthy. People are willing to pay more for restaurant food because they assume the quality is better, not on par or worse than fast food.
well iam not american and live outside of US, but for me, a diner is, a place where you can get coffee, milkshakes, breakfast, lunch and mayne a couple of main dishes. simple and really hard to mess up
I think the reason why Ramsey does these one page menus is so that the restaurants can get their inventory and labor under control while potentially turning a profit in the subsequent months/year. By no means do I think he intends for them to stay that way. Get things under control, grow the customer base, gain some profits and then start expanding the menu responsibly to maintain high standards and food quality. Trust his process and it will reward them.
It's insane to me that people would enjoy a menu that's 420 menu items. Yes there is variety but the issue with that is there is no way all that food could be kept fresh and not frozen. As someone who has worked in restaurants half my life the most I've had to deal with was 75 and that was insane I can only imagine trying to remember and master 420 items. Less is more but if they wanted to add say a handful of the old items then I'd understand it but it is what it is it ain't my place and money on the line.
I’ve watched every Kitchen Nightmares. Most of these restaurants do not want to put in the work from 5:00 AM to prep fresh food. Laziness drives them to have everything frozen.
The new Kitchen Nightmares episodes were so bad sadly. You could tell it was even more scripted than usual, heck they even had Gordon plug SAW cuz SAW X was new at the time. Every single episode was either filmed in NYC or New Jersey, simply because Gordon lives in NYC and could go home after filming was done. The entire new season just feels off.

As usual, they miss the point - the reduced menu is to get key items correct and good, and gradually add items back or new items but making sure they're done properly until they're at a place they want to be. It's the same principle Ramsay seems to hold for helping home cooks make easy meals - a few simple ingredients that you can get good at cooking and will be tasty and nutritious.
What i find unbelievable about this video is the state of the food storage. I know NYC sends around health inspectors on a surprise basis - the condition in the basement would have closed them down immediately; not just for a short period of time, either. They'd have to WORK to reopen. With Gordon, they know when he's coming. They know he checks out food storage, if they ever watched past shows. This absolute horror of a state just doesn't ring right, and disturbs my sense of suspension of disbelief.
I wrote the above before getting to the end of the video, where I found out about the restaurant 's previous run-ins with city inspectors. Hmm. I'll pass on the place.
I know these kinds of videos may seem 'too soon', but honestly i like it. I don't really think I'll watch the newer episodes, at least not all the way, so i like the 'recap + additional info' style
That's cool. Just dump everything you've been taught and go back to the old, failing menu and subpar cleanliness habits. That'll work out great for you 🙄

You get what you get. After 18 yeas of KN, you'd think that people who operate commercial kitchens would know better. Obviously not.
So many owners and customers think having a 300 item menu is a good thing when in reality it’s not. Especially a diner.
