I work in a cafeteria and as soon as I became head cook I scrapped our horrible sloppy joe recipe that was more like candied hamburger swimming in grease and replaced it with this recipe. Customers can't get enough of it, if anyone asks for the recipe I give all the credit to ATK.
Good for you, great story! More power to you in your career.
THIS IS WHAT HEAD CHEFS DO. HORRAY I BET YOUR CUSTOMERS LOVE YOU
Well good for you lmfao😅
Right on! 👍
Yasss I wish I was at your school
1 lb 80/20 ground beef
1 tbsp water
1/2 tbsp baking soda
1/2 tap salt
2 tsp oil
1/2 an onion
1/8 tsp baking soda
2 cloves minced garlic
2 tsp paprika
1/4 tsp red pepper flakes
1/8 tsp salt
2 tsp brown sugar
1/4 cup tomato paste
1/3 cup ketchup
1 tbsp Worcestershire sauce
1 tbsp red wine vinegar
1/2 tsp cornstarch
1 tbsp water
Thanks for listing the ingredients in the order in which they are added--that's very helpful. But I want to point out two typos: in the first group of ingredients, the slurry should be 1/2 tsp (not tbsp) of baking soda. Also, in amount of salt should be "tsp," not "tap." But again, thanks for listing this.
thanks for this and @GuyNoirxyz for the corrections
Way, way, WAAAAAY too over-complicated for something simple and easy. This is what ruins classics. That and the fact that it doesn't have finely diced green bell pepper... Nope!
Ketchup and green bell pepper? Don't forget the onion? Can do a little better than that.
I agree
Too complicated!
gotta have green and red bell peppers they add a good flavor
They make everything way to complicated.
I grew up eating Sloppy Joe's and still love them, and will be trying this recipe for sure. One thing I've done since having kids, that you may want to try, is I serve them with hot dog buns. They taste the same as hamburger buns, but the meat doesn't fall all over the place.
And for today's science lesson.
Seriously, thank you for explaining this.
More budget friendly recipes like this please....
Made this for dinner it’s amazing taste it’s not sloppy at all…it’s so delicious
As they made it here, I wonder who's budget this is friendly to?
What wrong with a little crunchy onion in Sloppy Joe's.
I love watching these segments when you break down the science of cooking. My Sloppy Joe's aren't sloppy either. Love the idea of the baking soda and the corn starch slurry at the end.
Bridget literally released her inner Ron Swanson and said what most men would say at the table, "if I wanted a salad I'd order one."
love that!
Agreed! I do always order the salad too though. 😊
Lol

yes, its so hard to watch the video again and write down the ingredients

I watch people cook on RUclips often, and this is teh first time there was such a bait and switch from the links.
We use Bennett's Chili Sauce instead of ketchup. And maybe a little yellow mustard 1/2tsp.
I use taco spice.
@@fnjesusfreak lol........
I make and can my own chili sauce...it is so much better
We had sloppy joes as a simple meal with tater tots, growing up. My mother buttered and toasted the buns, and we had them open faced. So good. I made them recently, and they're still good! Good childhood memories.
They're even better on the tots, without the bun, and some cheese sauce.
Sloppy Joes and Tots for the win!!!
I got what you had open faced right here!!! 🕺🗿🐓
Add a smear of French onion chip dip on the bun for an even tastier treat!! Our family loves them
I love that smear idea! Thank you!
Very interesting idea.
We do this. It's so good.
A lot of recipes have carrot and other veggies in it is because that is the only way to get some kids to eat their veggies.. plus they add their own flavor.
Ground beef, mustard ketchup Worcester sauce s/p and garlic powder. This is nonsense lol
I agree. This is kinda complicated. I have never tried mustard in my joes, I will give it a go🤔
I eat Sloppy Joes because they are comfort food. I like them sweet and messy. I don't want some elitist version that makes it more healthy and less sloppy. You are the type of people that ruined the original recipe for kraft powdered Mac & Cheese.
Losttoanyreason, so, you want your food dumbed down to the lowest common denominator. I'm guessing a single couch potato, who opens cans, boxes and pouches, to microwave, when too broke for takeout. Why are you even here?!? Go back to the little kid's table.
More episodes with Elle, please. She's clearly a genius in the kitchen, and has a good spirit, too.
@@sandrah7512 I didn't know that, thanks. I know that the new shows on PBS are not done at their test kitchen studio. I saw Elle do a great recipe from her home. She has changed since I saw her on this show. She is a very good cook as well.

What has the world come to when people need to watch videos on how to make the simplest dish in America? What's next? A tutorial on how to use toilet paper more efficiently?
More than likely
I like my Joe's dripping down my hand. This is the neat adult style! I am a kid at heart for sloppy joe's Messy is best! 😀!
Thought that's what the potato chips were on the plate for to scoop up the meat that fell from the sandwich!
@@oneitalia2312 Of course! When I was a kid we often had sloppy joes because at that time, my wonderfully talented mother was still adding recipes to her collection and her kids would only buy-in on the staples. Two out of three of my mother's sons would put the potato chips *on* the sloppy joe sandwich and they were always crinkle cut style to hold up to the moisture. 😉
40 years and more later we all love to cook but I was the only one who chose to do it professionally.
Cool trick with the baking soda, both for the meat and the onions. Going to save that up for future reference.
You can also use the soda dry on meant to enhance & ensure a good searing.
I love sloppy Joe’s! Thank You for the recipe. It’s close to my recipe except I use a Roma tomato in place of the paste. I use the pickles and a slice of Kraft American cheese, sometimes thin slices of sweet onions. Vidalia onion when in season. Yum.
For me, it isn't sloppy Joes without some finely diced bell pepper in it.
red or yellow?
Orange
I always use green bell peppers and I add mustard too.
@@jay1hi547 That would be my choice too.
Must have diced pepper 🫑 in it
Baking soda is also the secret of carmalized onions. Add just a bit and a one hour cooking turns into 15 minutes Carmelized onions. Don't forget the salt & pepper!
That's exactly what they said in the video 😉
that's what i just discovered and curry is the first thing come into my mind
@@VarongTangkitphithakphon I'm glad you like it with curry. I, personally, do not care for curry. But, please, enjoy!
@@PastorJack1957 How can you not like curry, there are a million different kinds from many different countries and cuisines. Butter chicken for instance, an Indian curry or massaman curry from Thailand, sweet Japanese curries and many, many others.
@@MaZEEZaM because my particular taste palette doesn't care for it. I'm sure I enjoy things you may not.
I realized long ago that when eating Sloppy Joe's or even a pulled pork bbq sandwich is to eat them on hot dog buns.....less mess plus hot dog buns are tastier in my opinion.
I eat Clean Joe's. Open a hamburger bun on the plate, dump the sauce on both buns... and eat it with a fork.
Really? Souns like an idea to try
Also if you slice a kaiser bun partially, making somewhat of a pocket, you're good 2 go!! I've also tried using the croissant rolls out the can, making Joes-inna-Blanket/Pocket Joes!!😋😉
I would love to be able to recreate the sloppy joe's served in my high school cafeteria.
I always wonder if everything tasted so good in high school because I was so hungry by the time lunch period rolled around.
Looks good but I always have to add green peppers in it
I don’t even like green peppers and yet that sounds absolutely perfect this time.
@@jjpp2216 it makes it so much better 😌
Peppers and beef whether sweet bell peppers or spicier chiles, are a marriage made in Heaven.
Yes, green capsicum would be nice as would some lettuce or rocket on the bun for some freshness.
Definitely...!!!
I like firm onion, to each its own.
Based on the video, since I don't have a Cooks Illustrated subscription:
America’s Test Kitchen Sloppy Joes
Serves 4
Ingredients:
• 1 tbsp water
• 1/2 tsp baking soda
• 1 lb ground beef, 85% lean
• 1/2 tsp table salt
• 2 tsp oil
• 1/2 onion, finely chopped
• 1/8 tsp baking soda
• 2 cloves garlic, minced
• 2 tsp paprika
• 1/4 tsp red pepper flakes
• 1/8 tsp salt
• 2 tsp brown sugar
• 1/4 cup tomato paste
• 1/3 cup ketchup
• 1 tbsp Worcestershire sauce
• 1 tbsp red wine vinegar
• 1/2 tsp cornstarch
• 1 tbsp water
• Buns and pickles, for serving
Method:
1. Make a slurry of the water and 1/2 tsp baking soda. Pour over the ground beef, along with the salt. Stir, then set aside.
2. In a nonstick pan, add the oil over medium heat until it shimmers. Add the onions and 1/8 tsp baking soda. Sauté for 3-4 minutes until the onions break down.
3. Add the garlic for 30 seconds, until fragrant.
4. Add the paprika for 30 seconds, until fragrant.
5. Add the red pepper flakes, salt, brown sugar, and tomato paste, cook 3-4 minutes, until the tomato paste becomes rust-colored.
6. Add the beef to the pan. Break it down with a wooden spoon. Cook until no longer pink, about 5 minutes.
7. Mash the beef with a potato masher.
8. Add the ketchup, Worcestershire sauce, and red wine vinegar. Cook for a few minutes.
9. Make a slurry of the cornstarch and water. Stir into the beef until it coats and thickens, about 1 minute.
10. Add any other seasonings to taste.
11. Serve over buns, topped with pickles. Smash the buns to ensure the sloppy joe sticks.
Thanks for taking time
Thank you!
Looks good but I want the sloppy part.
“Joe walked a few blocks uptown”!!!!! 🤣😂🤣 Bridgett! - you are hilarious. I will make this to intro my grandson to the SJ. You are both lovely ladies who are so enjoyable, entertaining and informative to watch. Thx so much.
Sloppy Joe’s MUST MUST taste like the ones the lunch ladies made in the 60s. Period. Those classic lunch foods just don’t need to be sophistified. 🤓
❤❤😊😋
Nostalgia goggles can be deceiving, tho. Honestly this does have the similar taste- it's the same basic thing. The quality, spice, and texture is just a bit elevated.
If you want that classic feel, basically do what they did, except put in a little bit more ketchup n sugar, and cut the red pepper out. I did that for my grandma, and she said it was both the best sloppy joe she ever had, and reminded her of her childhood. :P
👍👍👍
"Classic Sloppy Joe"? My, you even contradict yourself at the beginning of the video. This is a mess.
Far from childhood Joe's. 1 lb ground beef browned. 3/4 can tomato soup. Spicy mustard. And woustersauce . Done. And it's closer in flavor to what you had is a kid
Just made this..with everything here but I remember them with minced bell peppers with the onions! Turned out great!
"sweetened"? Who the he** sweetens sloppy joes?!
I just wanted to see a Sloppy Joe recipe, not a science project. Thanks all the same.
Eek! I didn't get out before the creepy ending! Aaarrrggghhh!
If you want great sloppy Joe s ask a cafeteria lady for her recipe…🇺🇸
I hate fighting with Joe! That’s why I never make them. I’m a neat freak, lol! This sounds perfect for me ☺️
The problem with baking soda is that its really easy to add too much and ruin the flavor. Be very careful when cooking with it in recipes like this.
That's why they give you a recipe 😉
@@Bearded_Toy_GuyYup. They test the recipes before publishing them
Made this last night. It was good but it tasted nothing like what I spent the last 62 years eating so it didn't come close to being a comfort food.
Looks delish! But I'll have to give up using chips to clean the Joe off my plate lol.
Once apon a time in key west we got to work at 8 am the boss showed up and became very abusive. Stomped out very angry! Randy, my co worker, looked at me and said sloppy joes is open. The boss found us at the bar around noon. Great sloppy joes! And rum...
Great story, thanks for sharing. I did the Key West experience once, long long ago. And Sloppy Joes was part of it.
@@geezermann7865 that happened maybe dec or jan 1995? Right around those months
@@scott.wallace8625 I was there for about two weeks in late December/early January too, but 1985/86.
I’ve eaten there to. Sloppy Joe Nacho’s. Excellent indeed.
Those look really dry to me. They need some more sauce.
Amen, their called sloppy for a reason
I was going to Culinary school in the early 1990's. I made homemade sloppy Joe's. My housemate brought over her good friend. They both said you don't use the sauce from the can? N!O! It is not that difficult. I used ground turkey, because it was cheaper, back then. No clue...
I had forgot that there IS a can at the store, and I used it years ago, didn't like it. Much better and easier to add your own ingredients.
Best ever Sloppy Joes are very simple -- 1 lb ground meat well browned and drained then equal parts (best guess at equal parts) mustard, ketsup, and BBQ sauce. A little more or less of any of the three depending on you taste. A little salt and pepper on the meat while it is cooking of course.
Mom's recipe: Onions, ketchup, beef, S&P. Brown the beef, leave the chunks, add onions and brown, add the Heinz Ketchup simmer, done..
No, no not sloppy joes…don’t know what you call this but it’s not sloppy joes. Gag
These are GOOOOOD! Eating one right now...the pickles are a nice touch! I added a little more ketchup, toasted the buns and they are perfect!
Cole slaw is also good on Sloppy Joes
Do you use dill or bread and butter pickles?
I use ground bison or ground lamb.
I much prefer ground bison, but doesn’t the lamb overwhelm the sauce? I can see making a sloppy Joe with lamb, but I don’t think I’d add tomato - just lots of onion and mushrooms and a thickened stock.
Yes!!!! Ground bison is a definite plate show stopper!!
I appreciated the baking soda tip, but you totally lost me at sugar and ketchup. I know those ingredients are found in nearly every sj recipe, and it’s just bizarre to me. I don’t understand why anyone would want a sweet sj sandwich. I skip the sugar and swap tomato sauce for the ketchup.
It's to adjust the acid & alkaline levels & to balance them out ...As in any & every tomato based dish one always adds some sugar , how much is dependent on how much tomato sauce there is ... Spaghetti & Pizza sauces tend to be bitter without the addition of sugar as well in Goulashes especially American Goulash as it has a large tomato presence in it's sauces ... It's just a little kitchen science ...Whether we don't know or don't understand why a lot of chefs use certain ingredients all the same way it's usually accredited to it seems to what worked out to be the best & what worked & usually a real scientific reason behind it ... You're Welcome ... Now just add the sugar Like ELLE & BRIDGET SAID ...!!! LOL😊😊😊🤪🍺🤪🤣🤣🤣😂😂😂
Heinz Ketchup is 48% sugar.
@@davidkihn770 It just amazes me how you have a culinary science lab such as Americas Test Kitchen that does all kinds of actual scientific tests on every aspect of every ingredient , what it's molecular makeup is & exactly what scientific result comes from the addition of such also in the varying amounts of such but you always get some nitwit that thinks they know more about food , recipes , biology , physics , & science in general....... Oooooooohhh , what a maah- rooooooooon........
Love love love Elle but I tried this recipe when I first saw this clip a couple months ago. My family did not think it had the right taste. Forget the paste and use all ketchup.
Thanks alot
Terrible 👎🏼
We had the same reaction to this recipe. This sloppy joe was lacking in sweetness, which is exactly what the ketchup brings.
We grew up on sloppy Joes and We still make these as often as we can. Thanks for sharing
Tried the baking soda in the onion trick and it was a yellow slimy inedible mess! Ugh!
Here in Iowa we eat classic sloppy joes with sandwich bread like a taco and that cuts back on the lost of sloppy joes when u bite.
I believe there are more people eating sloppy joes then anyone realizes. I have them made from scratch, no sugar at all. They're so good. I always add a little green bell pepper, but everyone should make theirs the way they like them. 💕💕💕
Wish I knew about these hacks when I was younger. I always had meat falling out of the bun.
I agree that all the Sloppy Joes I've had in the past were always toooooo sweet! Have to try this. Thanks Elle, Melaney from SoCal
.5 C ketchup .5 C chili sauce 1 small
onion chopped plus 1 Tablespoon Worcester. 1 lb ground beef. Best an easiest sloppy joes ever. Been making these for 40 years. Never tasted better.
I tried this and it came out great!
This was a dud for me. I'm not a fan of the baking soda approach. It may speed things up, but the taste is off-putting and mushy. I think the meat and onions are much better browned naturally. I'd use a traditional recipe for this and just use the corn starch trick at the end to tighten it up.
Metal potato masher on a non-stick skillet? Poor technique. Much better ways to do this. Like add 1/2 cup of water and break it down with a wooden spoon.
Bridget and Elle work well together. Keep up the good work ladies
Love peppers and onions in my Sloppy Joes. And love the crunch of a good onion on the side.
Sloppy Joes are so good. All the cool adults look down on them, but us cool kids know better.

Thanks for that fabulous recipe. 👍🏻
Ahealthy squirt of regular mustard to replace vinegar. That's what we use
Just now, I used Del Monte's red cane vinegar. First time making this, so nothing to compare it to, but it turned out OK.
You can use any vinegar in a 1:1 ratio to substitute. I actually do 1 tsp rice wine vinegar and 2 tsp yellow mustard in this recipe. I believe mustard should be in Sloppy Joe.
