- There's a bit to go over, so we'll break it into pieces, and get right into it.
The Meat
I used about 2 1/2 pounds beef (cut into 1 1/2 inch pieces)
1-2 tablespoons of olive oil, or enough to coat meat, so the seasoning will stick
1-2 tablespoons seasoning blend per pound of meat, down below
2-4 tablespoons of oil to brown the meat
1/2-1 cup beef stock to deglaze the pan when you're done
Go ahead and chop your meat to the size you like, or buy it pre chopped. Now pour the olive oil and seasoning blend onto the meat, and mix completely. I let mine marinate for a few hours, but that is optional. Now heat your oil and brown the meat, I used a new to me method, of browning only one side, video of where I saw the technique linked below. Once brown put the meat into the crock-pot, and deglaze the pan. Deglazing the pan just means getting up all of the little brown bits on the bottom because they are yummy. Pour stock into the pan and use your cooking utensil to scrape the pan until it feels smooth, now add the mixture to the crock- pot.
The Chile Paste
3 different dried chiles were used in this recipe, arbol, guajillo, and pasilla.
I like 2-4 of each chile per pound of meat.
Stock to steep them in, I used about 1/2 cup, make sure to use enough to cover the chiles
First wash, then deseed, all of your chiles. Now you'll want to toast them in a hot pan for a few seconds. It shouldn't take more than 30 secs to toast them, you'll know they're done when they puff slightly and toasted chile can be smelled. Now boil some stock or water and cover the chiles, you also should add a plate to weigh them down and make sure they stay submerged. After 30 mins, you'll want to blend with the steeping liquid. First check the liquid for bitterness, if it is bitter don't use it, instead change it to fresh stock or water. Once blended, add to the crock-pot, and use a small amount of stock or water to rinse the blender, make sure to get all that goodness.
The veggies
I used 1 small red bell pepper, any will work
1 med white onion
What I consider 5 large garlic cloves
1 tablespoon seasoning blend
1 can fire roasted tomatoes
1 tablespoon brown sugar, optional
1-2 tablespoons Worcestershire sauce
1-2 tablespoon olive oil to cook veggies in
2-4 chipotle peppers
Heat up your pan with the olive oil, and fry the bell pepper and onion for around 5 mins. Now add the whole garlic cloves, and chipotle peppers and fry an additional 2 mins. Now add the tomatoes, sugar and spice blend, mix and blend. This is optional, and I did it for texture purposes. More on that down below. Add this mixture to the crock- pot as well.
After everything is in the crock, you can add a handful of baby carrots, and some bay leaf. I would recommend 2-4 of those. Cook on low for 5-7 hours, checking for tenderness at the 4 hour mark. Enjoy.

I like to control my salt, and I always put less in my blends, sometimes I need to adjust the salt in a recipe, please check yours after cooking and salt as necessary

2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon Mexican oregano
1 tablespoon cumin
1 tablespoon cayenne pepper
1 tablespoon black pepper
1 tablespoon pasilla chili
3 tablespoons salt

If you want a thicker version of this stew you can do this a few different ways. You can make a corn starch slurry using about 2 tablespoons of the cooking liquid, with 2 tablespoons corn starch. Mix these outside of the crock-pot, and add it back in. Now cover and allow to thicken for 15-20 mins. Repeat if needed. You can also cover your meat in flour before you brown it, and the flour will help to thicken the sauce as it cooks. You can just use less liquid, and don't blend the veggies. You can also cook this as described, separate the meat and sauce when its done, then cook the sauce on the stove until it gets super thick, then add the meat back in.
This stew usually has a nice thick texture to the sauce, and it comes from cooking it on the stove top, the meat breaks into small pieces and it is really wonderful. Today I wanted to try to recreate it in my own way. I blended my veggies and it gave my sauce this pulpy type texture in the best way. This is an optional step, and it also added more moisture to the party. So keep that in mind if you want a super thick sauce.

I love that superb sauce Resa. As for the searing, in low and slow cooked meals like this the searing is done for the flavour, because the meat will be juicy anyway. I will definitely love this one, totally my kinda stew, especially with your special taco seasoning 😊. I imagine eating this with crusty bread as well as all the different ways you've mentioned. Very comforting dish and super versatile. I can totally imagine the aroma in your kitchen while this is in the crockpot. Gonna have to bring out the instant pot again for this recipe. The beef is so tender, I love the baby carrots in it. I'll bet some baby potatoes will be good as well. Very interesting, I've never tried browning beef just one side...I think it will throw me off my game and won't be able to finish cooking. Those chilies 🤤 The colour of that chili paste was just incredible. I know I'm absolutely going to love this dish - it actually reminded me of how we cook meat curries at home - the ingredients and spices are actually very similar.
