Did you ever build the lean to on the end of your shop?
Drywall mudding and taping is an art and trade in itself. Some people are able to master it. One thing I noticed and you didn’t mention, after each coat of mud after it’s dried you should be lightly sanding to knock down the high spots and help feather the edges.

Looking good. I wish I knew more guys in the trades. I work in ship repair and have experience fitting and welding steel. Doesn't translate well to home improvements.
