  • Jalapeño Popper Chicken Casserole
    INGREDIENTS:
    4 cups riced cauliflower
    3/4 cup light cream cheese, room temperature
    3/4 cup light mozzarella cheese
    1/4 cup grated Parmesan cheese
    1 lb. raw breast tenders
    One 4-oz. can diced jalapeños, drained
    Topping - jalapeño slices/bacon bits
    DIRECTIONS:
    Preheat oven to 375 degrees. Spray a 9" X 13" baking pan with nonstick spray. In a large bowl, combine cream cheese, 1/4 cup mozzarella, and 2 tbsp. Parm. Stir until uniform. Add riced cauliflower and chicken, and sprinkle with seasonings. Mix well. Fold in jalapeños. Transfer mixture to the baking pan, and smooth out the top. Top with remaining 1/2 cup mozzarella. Bake until chicken is cooked through and cauliflower is tender, 40 minutes.
    Add toppings and broil 4-5 minutes until golden brown. Let cool for 10 minutes before slicing.
