    Red curry is my favourite Thai curry, I love this with chicken thighs and Thai eggplant, its so good with rice noodles too, now you got me craving for this 😆 oh my, its so delicious ❤️

    Will try this recipe using Green Curry paste as I already have this on hand. In case my local Asian market doesn't have Kaffir Lime leaves, I've order some from an on-line source that advertises as having "fresh" leaves. The last time I visited my local market, they had Thai Eggplant. It is a lot of fun learning about the Thai ingredients and then tasting the many flavors. Thanks for the time you put into your channel and sharing your talents.

      They will share the same method 😊 When you get fresh Kaffir lime leaves, you can clean them with water then pat them dry. Must be dry other wise the leaves can go bad.
      Separate per portion to use and fold them in paper towel. Put those in zip-lock/sealed bags then store in the freezer. Then you can have fresh leaves stock up for months!
      When you're going to use, just leave them out for a while. They defrost quite quick 💕

      You can use brown or just a granulated sugar. But add a little bit by bit to your preference since the sweetness level will be different from palm sugar. Hope you’ll enjoy 🙏🏻💕
