If you really wanna justify taking Spirit Guardians, just say that's Piccolo's Tri-Form technique. The way he uses it is pretty much in line with what Spirit Guardians does.

I like your build. But I did a Piccolo build for a One-Shot a while back. And I do like mine better. The Build for Lvl 20 (I made this Adventurer's League Compliant):
Race: Githyanki
Background: Wildspacer. Piccolo is an Alien and likes to live in the Wilderness. So Athletics and Survival proficiency are spot on. Navigator's toll and Space vehicles less so. But we also get the Tough feat. Piccolo shouldn't blow over like a leaf in the storm.
Attributes: Str 10 (would feel weird to dump this completely), Dex 16, Con 14, Int 8 (Piccolo didn't go to school), Wis 17, Cha 8 (He isn't the most social person)
Class Spread: Druid 14 (Stars), Monk (6 Astral)
Feats and ASI: Druid 4 Resilient CON. Druid 8 +1 Wis +1 Con, Druid 12 Wis +2, Monk 4 either Dex +2 or Unarmed Fighting Style via Fighting Initiate.
I would start Druid for INT and WIS saves, those tend to be the bad ones. I covered Con with Resilient. And Dex Saves mostly do damage and the build gives us several ways to reduce damage. I'd pick up Perception and Insight as additional skills from Druid.
I would go for the class spread of Astral Monk 6, Stars Druid 14. Which would give a Stat spread of Str 10, Dex 16/18, Con 16, Int 8, Wis 20, Cha 8, AC 18/19, 203 average HP, and Spell/Monk DC 19.
You can also get Unarmed fighting by only going Druid 13 and one level Fighter. But the level 14 Stars Druid feature is just too good in my opinion considering the meager AC.
What does this build get us:
Martial Arts from the Monk of course.
Stretchy limbs from Astral Monk to grapple and punch with. Thorn Whip works along the same lines. Spells like Hold Person that can mimic the Piccolo wrapping people in his elongated arms bit if reflavored. We can get big and bigger with Enlarge from the extended Druid Spell list from Tashas. And we can reflavor Polymorph Giant Ape as Piccolo getting even bigger.
We have several ways to mimic Energy Blasts. Stars Druid gets Guiding Bolt and can cast it without expending spell slots a number of times up to your proficiency modifiers. Call Lightning and Sunbeam can come in as stronger Ki Blasts.
We can meditate and try to sense Ki/Magic with Detect Magic and spells like Commune with Nature.
If we want to use our KI/Magic to fly for long periods. We can pick up Wind Walk. For shorter jaunts during combat Stars Druid gives us the first Powerup and also flight. Starry Form lets us spend our Wildshapes a little more thematically than turning into animals. Archer form gives us additional small Ki Blasts. Dragon form allows us to protect our Concentration spells even better and from level 10 of Druid is also gives us a flying speed for its duration. Chalice form buffs our healing, which is less thematic. But hey. Nobody is perfect. Or reflavor it as giving out words of wisdom. And thanks to slowfall from monk you don't need to fear switching forms midflight to huck an archer blast or a healing spell.
But in typical Dragonball fashion the Power-up nonsense doesn't end here. We can pick up 4th level Guardian of Nature as first "transformation/ powerup" to buff our fighting abilities. Our Wisdom and Dex based attacks all have advantage in Tree form. And the Tree is Nameks holy symbol.
We do get one more Power-Up. But Level 7 Draconic Transformation from Fizbans is on the Druid List. We can fly. We can shoot Mouthbeams/Dreagon Breath like Piccolo does sometimes. And we can sense the enemy's KI even if they try to hide their KI (Blindsight).
The transformations/Power-Ups arent a perfect fit, but a thematic one. Piccolo gets stronger by fusing with Nail on Namek. So out in space. Granted this is as flimsy as it gets, but the others are better than Starry Form. I promise. Kami was the Guardian of Earth and we can invoke this via Guardian of Nature Tree or Beast. And Orange Piccolo gets his power unleashed by Shenron, so Draconic Transformation.
And we can take a punch too. Our AC isn't great. But we have over 200 HP. Absorb elements and Protection from Energy can help shelter us from blasts. We can heal us and our allies to bolster that. And at lvl 14 of Stars Druid we picked up Full of Stars, which means we have resistance to bludgeoning, piercing and slashing damage while we are in our Starry Form. Which is also the Reason, why I didn't go for fighter 1 for unarmed fighting. We can do good damage. We have options to control the enemy with Druid Spellcasting. We can be very mobile. And we can take a hit.
And depending on if we have Cosmic Omen Weal or Woe, we can either make our saves and checks better or theirs worse.

Really love the use of Astral Monk for stretchy arms.
Forge cleric might work for Piccolo as well thematically. Kami was the creator of the Dragon Balls and Shenron. Miracle would probably be appropriate for that, but you'd need to sacrifice some Monk levels to get Cleric that high.

I'd love your takes on Trunks and Gohan. Ones a time traveling superwarrior of the future, and one is stated in universe to have the potential to be better than Goku while also having so much rage that it's required for almost all of his most famous transformations. Thanks for the great vid!

I liked this build overall. One main thing different that COULD be played around with is that it is specifically stated the Kami was from the Dragon line of Namekians so there is a pretty strong argument for a Draconic Bloodline Sorcerer. 5 levels of that would be enough to have grabbed Lightning Bolt.

I don't know if you're aware of it but God's get double attributes so that would mean your max built with stop at 40 not 20 like a human would or just the average person
