You can also hold back a large leaf of the cabbage to use over the top instead of plastic. Just lay it over the top and tuck it around the edges like you're making a bed.
I must try this. I'm from Hawaii and Kim Chee was a staple in the kitchen. I did make it once a very long time ago. It makes a yummy dip when mixed in with softened cream cheese.
I’ve made kimchi a few times. The most recent batch didn’t come out well because I didn’t rinse the cabbage well enough - I’ll still eat it, but it’s SUPER salty. Make sure you rinse well, people!

I’ve eaten it before my friend is from Korea i think you have to put it in a dark cold place for awhile if i remember right
