    My husband comes from a european background, and when he was a kid, it was a tradition for his family to make a big batch of sauerkraut. To this day, we still have the cabbage shredder his grandparents used, and we will be passing it down to our children along with that tradition.

    Seriously, that is the most beautiful head of cabbage I have ever seen!
    Story time:
    I am Romanian I an and my family has been making sauerkraut since the old country. Our Christmas dinner traditionally is stuffed cabbage. However, preparation of that meal starts in November when homemade sauerkraut and soured cabbage leaves are "put up" in crocks. Dill and savory is added in little cheesecloth pkgs. for flavor. By Christmas the cabbage leaves and sauerkraut is sour enough for us to use. The cabbage rolls are placed in the pot with the sauerkraut on top. This is cooked Christmas Eve for the next day. To my family, it is not Christmas eve until the aroma of stuffed cabbage fills the house! I've had this every year since I was a child. My mother taught me how to make it and I make it now since my parents have been gone. I think of them and my grandparents and ask them to guide my hands when I prepare this dish. I know they are with us when we have our Christmas dinner and I am so honored to carry on the tradition...

      That sounds very good! My Mom made cabbage rolls with meat inside. I had forgot about them until you mentioned your tradition. Better than any processed frozen meals from the store!

    It's very important too to get your salt to cabbage ratio correct. Too much salt and it won't ferment, not enough salt and it may spoil. Also, many people let it ferment for weeks so nine days is not a ceiling. I have found that 13 days is perfect for my taste. Thanks for the video.

    Finally a simple sauerkraut recipe that I'm confident of making. Seen too many recipes in the past, but I'm always afraid it will turn bad instead of ferment. Don't want to get killed from eating bad sauerkraut😅

      Sometimes it can form a dusty yeast residue on the top but you can simply scoop it off it's not toxic

    I love to cut my cherry tomatoes from my garden in half and top them with some homemade sour kraut. The sweet juicy tomatoes with the salty crunchy kraut is a match made in heaven.

    Love this video! Grew up having sauerkraut, but never made it. Wonder if my great grandmother did, but do not know(both great grandparents were German, grateful for many German recipes we did have growing up). Just found homemade sauerkraut at a store that was homemade with caraway seeds, it was awesome. ❤

    I made a quart and a pint the other day and I used salt water in a zip lock baggie to bridge the gap and hold down the sauerkraut and it’s working ! Thanks a lot.

    I was just enjoying a hot dog with Sauerkraut while seeing the notification for your video 😊 Unfortunately it was the jarred kind and not homemade, but the next batch may be just that, thanks to your easy to follow instructions and even better, for a small batch. Tip for the Lid. I bought the Ball Fermentation Kit, that comes with Lids that allow Ferments to "breath," while keeping bugs etc. out. Been using these for my Milk Kefir and Sourdough Starter for years and love them.

    I add shredded carrots and thin sliced onion and use 1/2 gallon jars using airlocks. A Russian lady gave me the recipe. We rode the train together and met there.

    Thank You for this. My German Grandma would make this. Yum.
    I have a preservative story. I thought I was getting dementia. I did some research and found that coffee has the most chemicals because where it is grown there are less restrictions. I've been drinking 2 C for breakfast for 30 years. So 6 mo ago I switched to organic. My Hair and Eyebrows are coming in. My fingernails are super strong. I'm just healthier. :)
    Also....One time I managed a Bistro in a college town and Miss Claussen worked for me. :)

    Thank you for the recipe I'm sure you know sauerkraut is good for you. I like it. Its one of the ways I like hot dogs, sauerkraut and grilled. I heard you said about being good for you. I'm diabetic and they say eat 1 spoonful a day. It's cheaper making it or buying it then taking supplements

    I LOVE kraut! Germanic heritage. I LOVE KRAUT. Do you honestly think that quart will last over the winter? Besides, fermented veggies are absolutely GREAT for the microbiome for the gut. Kraut is one of my favorite foods. My history is Bavarian.
    Don't eat out of the jar? Are you kidding? However, each time I do eat out of the jar, I use a clean spoon. "don't eat out of the jar" pthffff ( I don't know how to make the raspberry sound in words).

    Try using a round wedge of apple about 3/4 of an inch thick to hold the cabbage under the liquid. Adds a nice flavor and keeps any mold from forming.

    Great shear. I love fermented food.
    What's the max time you can leave it fermenting ? and how much does the room temp affects ? Is there a to hot of a room temp that cant make it go bad IE make you sick ?

    Hey, I hope you get back to me. I am thinking that if you had one of those springs that attached to the With a vent on the top, but you could also use part from an innertube and cut it just right to fit in there, so I can push it down or will that make it taste or smell like Rubber?? I would think so.

      You can get Fermentation Airlocks on line. Brewing supply businesses have fermentation Airlocks for anything fermentable. Can also put in the lid a threaded 1/4" Plastic/Nylon Bulkhead Hose Barb Fittings(Brass fittings have lead in them) & then run PVC hose from it to a jar for the overflowing Brine Liquid to flow in to. Strain & keep the overflow Brine so the Jar with the Cabbage can be topped up if the liquid goes to low. Straight tap water should not be added to the Fermenting Cabbage.

    Thank you for sharing, so easy looking. You never mentioned exactly how much salt per quart jar. It looks like you could be using with three 1/2 tsp or 3 tsp measurement.
    I kept going back and speed reading in the area of adding salt, never saw the exact measurement.

    My Nana cooked hers on her space heater in her kitchen for hours while she rotated a pork roast. It had kraut in the bottom of the pan, she would scrape up bits of pork and toss in the big pot. Also caraway seeds. I used to steal finger fulls all day.
