    Laura I have been a fan now for over a year and I have to tell you I appreciate your videos. You are really easy to relate to and you make cooking so enjoyable. It's also nice to see you love what you do and it's genuine. Also I find it so cute when you start salivating when prepping your dishes. Guess what, so are we. Anyways, continued success and I'll be a fan as long as I love to eat which will be forever.

    I love ALL your recipes Laura!! My dad is from Bari and I loved growing up watching him cook and filling the house with the smell of Italy :) I just love how you share your passion with us and I can really tell how much you love your Nonna and memories of cooking with her!!     Thanks for posting this! Many, many years ago a good friend's mom made these and I loved them but never knew exactly how she made them. They too were from Italy and sadly her mom is no longer with us and my friend didn't know how to make them either (mom did all the cooking). This recipe, I believe, is exactly how she made hers. Can't wait to make these!!!!

    “Taste of my childhood” was a statement you made that rang true! Our Italian family begged for these as often as possible. No occasion needed. Mom made hers in a large pot with the chokes sitting on a rack over water. She steamed them until the leaves fell off. Oh my !! My siblings and I fought over them and we even ate them for breakfast. Cold straight out of the fridge. The reward after peeling leaves one by one was that delicious soft heart. I covered it in salt and gobbled the heart up. The best! Your recipe looks just like moms. Can’t wait for Spring to try. 👍🏼💕

    Hi Laura, great job. I peel and CHOP the stem up and put it in the breadcrumb, cheese, etc. Cook them in my pressure cooker. 6 chokes take 13 minutes. I love them. Been eating em for over 70ý years. Great job. ❤

    Back in the 50's my Nonna made hers like this but she added some ground pork to the stuffing. I've never tried making this but it sure brought back some good memories so I think I'll give it a try. Thanks for the video.

    I loved it when you said "I feel like I need some time alone", because that's exactly how I feel when I scoop that artichoke leaf into my mouth! Love, love, love artichokes! I also trim & boil them, remove the cooked leaves to eat later (usually with some garlic butter or leftover alfredo sauce) then I get rid of the 'choke' part with the yucky hairy thingies & use all the rest with blanched, drained & squeezed spinach, a bechamel sauce & fontina & white cheddar to make artichoke spinach dip.

    My family is mexican and they usually just stuff them with butter cheese and bread crumbs. . although delicious they can be super heavy on my tummy so this recipe looks amazing ! It's so much healthier yet they look absolutely divine! Thanks laura will definitely be making these soon.

    My mom makes it with chicken broth instead of olive oil; it just has more flavor that way. We sprinkle olive oil when we take them out of the oven though. Very yummy.

    My grandmas turkish and she makes stuffed artichokes and I've always loved it, she stuffs them with mince though, it was nice to see another version, thanks Laura can't wait to try it

    Ive grown up watching food network.And even though I love the food they make its always been unrealistic for my life.
    BUT your recipes are so easy and you give me the confidence to try them. Thank you for being real and explaining things so well. Ill be sure to try this one out. I LOVE ARTICHOKES :-)

    I make mine almost like yours..But I do not put my artichokes in the oven...I was taught to cook them on top of the stove in a big pot of salted boiling water topped with olive oil...I do trim off all the thorny leaves, but I remove the fussy middle from inside the artichoke. And cut off the stem at the bottom..I also keep the stems and boil with my artichokes together in a little bowl within the big pot...I tap the artichoke at the side of the sink to remove any little critter that may be hiding in between the leaves..And rise well under cold running water..I was taught by my grandma and mother to stuff with just fresh chopped parsley, Locatelli grated cheese, chopped garlic and salt and pepper to taste..My husband likes his stuffed with breadcrumbs, I make my artichokes two ways..Some with the breadcrumbs and some the simple way...In a big pot of salted boiling water, I cook the artichokes until the middle leaf is easy to remove..And the meaty part at the tip of the leaves are tender to bite into...So delish, I LOVE artichokes, they are my most favorite of all.

    Great recipe! Love artichokes! I don't use breadcrumbs, instead I chop the stems up and cut the block of parm into small cubes and insert the cubes and stem pieces in between the leaves with some garlic powder/salt. Love, love, love them!

    One of my absolute favs ! I grew up in a predominately 1st generation Italian neighbour in Toronto, Canada. I would always stay for dins when these where served.

    I made this last night. Really good! Next time I'll try steaming the flower more for softer petals. Gives a really great flavor for the stuffing!

    I haven't eaten artichokes since I was a little girl. My grandmother used to cook them in her kitchen. I wasn't a child who loved vegetables but I loved artichokes!!!

    people in western Turkey also make stuffed artichokes, but we stuf them with rice and dill, and cook them in a pot with water and lemon juice. i was surprised that you didn't get rid of the fuzzy part at the center.

    My grandma always made them for Easter. She always kept them in the turned-off oven to keep warm while she served the rest of the dinner. We'd all sit down and eat, then when dinner was almost over, grandma would realize she never took them out of the oven and say, "aw, I forgot the carciofi la!". Then we would all laugh (because she always forgets them -lol) and she'd bring them out and we'd all beast on them, like we didn't just finish a 4 course meal! So my childhood memory of them was like... they're "dessert" - lol.

    I made this and it turned out very tasty! The artichoke itself needed more flavor. When there was a lot of stuffing on the leaf, it was delicious but without the stuffing, not so good. so when i ate all the leaves, the only way I was able to eat the "meat" on the bottom is by actually putting the stuffing on it. So my suggestion is to make a LOT of stuffing and save some for later considering how bland the bottom tastes without it. Also, when she mentioned putting little water in the baking pan, make sure you put very little! I put a little but my artichoke was huge and some of my petals opened up a lot so the stuffing on the bottom got wet from it and was not good because it became soggy and the crumbs lacked that delicious crunchiness.

    Laura that is awesome !!! Can't wait to try it !! The way i've always eaten artichoke is I boil it, and then eat each leaf dipped in vinaigrette :D yum ! Also, just a little tip, if you wash the artichoke before cooking it, then you can actually drink the water you boiled it in, it's soooo good for your health !!! :)

    My family takes a tablespoon and scrapes out the center's small leaves thoroughly until the bottom of them, the "choke" the fuzzy part is scraped out and just a hard flat bottom center is left, then puts some breadcrumbs in the center. The center flat disk the leaves are anchored to is the tastiest part. And to answer someone else's question, you don't eat the leaves you just turn them upside down, and scrape the very bottom soft part of each leaf off (along with breadcrumbs) with your bottom teeth. Love this dish.

    I used to eat these as a child. My grandmother would make them. I LOVED them so much but always assumed they'd be too hard to make .

    Your recipe turned out GREAT for me Laura! Basically it is all the same ingredients that my family has used for years. The only difference is that We use the Italian Seasoned Bread Crumbs, just as you mentioned as an alternative. Oh and also, my artichokes were so HUGR, so I cooked them a little longer in the water. then they spread out way too much and looked sloppy after I stuffed them. That's okay though, because the final results made it all worthwhile. They were tasty and as tender as your sweet personality!

    Never tried to roast them,In Malta we Don t pre cook them, we fill them with garlic, parsley , tuna, we cut in small pieces the stem of the artichoke and anchovies then we cook them in a pot with some potatoes and olives. Yummy :) that's our Maltese version ; )

    we stuff them with tuna, parsley and garlic and we stuff them in the middle not on every leaf and in a big saucepan with olives and potatoes...super delish 😀

    we always have artichokes at our holiday table - the first year my dutch father had dinner with my mom's big italian family, he had never seen them before and didn't know that you're not supposed to eat the entire leaf...the whole family let him eat the entire artichoke!! 36 years later, they still tease him about it!!

    We make them a little differently. We stuff the raw, cleaned artichokes, place them in a pot with 1 inch or so of water, drizzle with lots of olive oil, cover and steam until a leaf comes out easily. Aldo we clean the center of the choke and stuff that as well.

    i feel sorry for people who have never had artichokes before! usually, i go for the marinated ones in a glass jar or can. here's a good recipe that I like to make with nonmarinated canned artichokes hearts: artichoke tempura! you just mix equal parts water and flour for the batter, i usually just do one cup of COLD water with one cup of flour...add a little salt and the batter is done. then you dry off the artichokes with a paper towel before dipping them in the batter and then you pan fry them. super yummy. super easy and fast way to make fried artichoke hearts!

    So funny to see how many people have never had artichokes before. Such an italian thing I guess. I was raised on them. My family takes the choke out and just stuffs the center then you eat the heart after you eat the rest.

    I do the Brooklyn Sicilian way.. with the Italian bread crumbs and low water to steam.. but either way, Italian stuffed artichokes are awesome! #nom

    Thank you so much for making these!! I can't believe it, haha! I've been thinking about stuffed artichokes lately, haha. My mom made them when we were growing up and I LOVED them!!
