    So i just made these and they are super easy, and taste really good, almost like in my memories.I never thought I could ever eat eclairs or pate a chou since I was diagnosed gluten intolerant and with a milk allergy.(I used vegan butter) and it works!!!!!!!! Today I made them as profiteroles with home made banana“ice cream“ . Next time I will definitely try some eclair au chocolat . Thank you sooooooo much for this!!!!!!

    You are an amazing teacher!! I've been sad lately that I can no longer eat eclairs. And voila! Here is your video. I don't have a stand alone mixer . . can I do it all by hand? Thank you SOOO much for this video. I just subbed!

      Thank you! If you don't have a stand mixer, I highly recommend a hand mixer. It will be fairly difficult to incorporate the eggs properly without it.

    Thank you for this amazing explanation! Mine came out great but the middle wasn’t cooked properly. I’m not sure why that happened but will give it a try again :)

      just leave them to dry in the oven a few minutes longer next time :)

    I just love this recipe. Note to self: don't take a Marvel quiz with your children while adding eggs to the dough. It's critical to only add each egg after the first is fully incorporated! My first batch was scrambled eggs and had to get dumped. Second one worked like a charm following Shay's directions.

    Mine were also flat, made your flour mix and used the 1/2 teaspoon xanthum gum. I am experienced with making regular flour choux. Followed your recipe, but I felt like the dough was softer than I was expecting. How to fix it?

    Thank you for this recipe ! What is the xantham gum for and can I replace it with something else ? Also can I use almond flour ?

      I haven't tested this recipe with almond flour. Xanthan gum is a binder for the gluten free flour.
