in Kenya we have so many names for banku - ugali, sima, sembe, kuon, ngima, so many more. Never seen an ugali made with cauliflower. This is amazing. And oats!! Thank you for sharing your genius.
Oh my goodness you're a genius, you thought of everything! This is the most appealing cauliflower "fufu" type recipe I've seen so far and I love that it doesn't involve squeezing out the liquid from the cauliflower. I think there's absolutely nothing wrong with regular banku but I'm looking forward to trying this all the same, I make my own sauerkraut so I can make it today! Well done!

The impression I'm getting is that it looks like another version or form of fufu but sort of a "green veggie" version of fufu. It's eaten the same way. Is that correct? Oh and btw, I also tried out your whole wheat Ghanaian bread recipe and whilest raising the dough; I turned my oven on and left the oven door opened and that really worked to make my dough rise quicker and higher! The two loaves turned out fantastic! This was done yesterday on a rainy and cold 40 degree day as well! One love.

Yes, banku is similar to fufu, except banku is originally made with fermented corn and Cassava dough and so it has a sour, fermented delicious taste. Fufu on the other hand requires no fermentation and typically made with Cassava and green plantains. This version of banku showcased on this video, however, is pretty much devoid of the starchy carbohydrates and so what I’ve done is replace the corn and Cassava (both starchy carbohydrates) with cauliflower and the fermentation flavour with sauerkraut, and oatmeal as the binder to achieve the sticky texture.
