- Aunty Gizelle (Rhett’s Mom) joins Shaun in the kitchen to learn how to make her favorite Chinese Steamed Buns (POWS) with three different fillings; pork, chicken, and shrimp. Here’s the full recipe:
Yield - 12 Pow Buns
Ingredients for Pork Filling
Black Pepper - 1/2 tsp
Five Spice Powder - 1/2 tsp
Minced Garlic - 2 tbsp
Minced Ginger - 1 tbsp
Hoisin Sauce - ½ cup
Brown Sugar - 1/4 cup
Xaoxing Wine - 1/4 cup
Honey - 1/4 cup
Soy Sauce - 3 tbsp
Whole Star Anise - 1
Red Food Colouring - 1 ½ tbsp
Pork Tenderloin - 2 lbs (cut into 1” strips to grill)
Method
1. Mix all ingredients except the pork in a bowl until evenly incorporated.
2. Cut pork into ¾ inch strips before adding to marinade.
3. Heat your frying pan or griddle over high heat.
4. Cook tenderloin stirps on either side for 2 to 3 minutes.
5. Set aside and allow to rest and cool.
6. Place remaining marinade in a small saucepan and reduce by half over medium heat.
7. Pour directly over pork.
8. Once cool, cut strips into bite sized pieces.
9. Set aside.
Ingredients for Chicken Filling
Sesame Oil - 1 tbsp
Minced Garlic - 1 tbsp
Minced Ginger - 1 tbsp
All Purpose Chinese seasoning - 1 tbsp
Soy sauce - 1 tbsp
Hoisin Sauce - 2 to 3 tbsp
Sugar - 1 tbsp
Minced Chicken - 1 lb
Method
1. Heat oil in frying pan over medium heat.
2. Once hot, add garlic and ginger and cook for 30 seconds.
3. Stir in seasoning, sauces and sugar until sugar is dissolved.
4. Raise heat to high before add chicken.
5. Stir continuously until chicken is fully cooked.
6. Set aside and allow to cool.
Ingredients for Shrimp Filling
Sesame Oil - 1 tbsp
Minced Garlic - 1 tbsp
Minced Ginger -1 tbsp
Cayenne Powder - Smidge
Xaoxing / White Wine Vinegar - 2 tsp
Minced Shrimp - 2 lbs
Salt - to taste
Chopped Chive - 2 tbsp
Method
7. Heat oil in frying pan over medium heat.
8. Once hot, add garlic and ginger and cook for 30 seconds.
9. Stir in cayenne & wine.
10. Raise heat to high before add shrimp.
11. Stir continuously until shrimp is fully cooked.
12. Once cooked, add salt and chive.
13. Set aside and allow to cool.
Ingredients for Dough
Warm Water - 1 cup
Granulated Sugar - 1/2 cup
Instant Yeast - 1 tbsp
Soya Bean Oil - 2 tbsp
Lotus Cake Flour - 3 1/4 cups
Salt - 1 tsp
Method
1. Add sugar, yeast & oil to warm water.
2. Stir until sugar & yeast is dissolved.
3. Cover and let sit for 10 minutes.
4. In a bowl, mix flour & salt.
5. Add water mixture to flour mixture.
6. Knead until a smooth dough forms (8-10 minutes).
7. Place into a greased bowl and cover with a damp cloth.
8. Allow to rest and rise for 1 hour.
9. Once the hour has passed, divide dough into 12 equal pieces.
10. Roll each piece into a smooth ball.
11. Cover balls with a damp cloth and allow to rest for 10 minutes.
12. Fill with 1 tbsp of filling and seal as illustrated in the video.
13. Place each Pow Bun onto a piece of wax paper.
14. Cover and allow to rest for an additional 10 minutes.
15. Use this time to prep your steamer.
16. Place into steamer and steam buns for 15 minutes.
17. Enjoy!

What suggestion can u make if u dont have a steamer?
If ur in Trini go to IAM. They also sell the long time hand one that u put down into a pot with a little water. Maybe less than $100 for it. It kinda opens out like flower petals. Fair & Square (chaguanas) should sell them also. That's what I have, and I used someone else's recipe and it came out wonderfully. I used boneless chicken thighs and the exact shortcut way he cooked the pork. It was time consuming as it was my first time, but very relaxing. Hope this helps 😊
