Just don't skip the MSG, or Uncle Roger will crash through the wall like the Kool-Ade man and yell at you! Locally tomatoes are not what they used to be, so we put sugar salt and MSG in them just to make them seem like good tomatoes!
My mum used to make this with diced onion instead of scallions and fry them with tomato first until they got a little brown to the relish before adding the egg and letting it cook. Maaaan one of my favourites

this is a great recipe even for someone like me who doesn’t like tomatoes. i also found out that if your seriously short on time another great way to make this is to add marinara sauce to some scrambled eggs with the seasonings. not quite as good as fresh tomatoes but you don’t have to wait for the tomatoes to cook down and it’s still very good 😅
@@amongthewildspices it' levels up the savoriness in the dish from a 10 to an 100, genuinely. Didn't eat msg most of my life, started cooking with it recently and it has been a genuine game changer. If you're scared of msg, try natural sources of it like shiitake mushrooms.
@@Pluto23_11 id say no. It doesn't have enough sodium in it to be anywhere near salty enough. And your dish will be too savory if you add too much. It's mono-sodium glutamate, so not the best salt replacement imo

There’s a middle eastern version of this called Shakshuka, but the egg is just cracked straight into the tomato. You dip bread and spoons straight into the pan and eat it that way. It’s delicious
In Indonesia it called telur orak-arik. Recipe almost same, but in food vendor on my neighborhood they use 1 egg with lot of vegetables (to cut budget).
