I do the same thing using my smoker. Instead of using tomato for filler, I use capsicum. For sweetner I use honey and two granny smith apples. For the vinigar I use apple cider vinigar. For the oil I use coconut oil as it Is a fantastic natural flavour enhancer. The men at work are always asking me when I'm making my next batch. Love your stuff mate, keep it up!

In less then a year all of my hunting knifes smelled horrible. they were not used knifes only one season to the next. it was bad enough that even though i needed to use them at deer camp the next year for for a harvest. I ended up using the cheap kitchen knives in the camper to do what i had to. to get the knifes to even smell right (not on the handle smell) 24 hr soak in vinegar.

Not enough tomatoes to can, too many to eat. What to do? Spicy ketchup!!!!!! It is AMAZING! I used the peppers I had~ Aji Rico, jalapeños and one red Monzano pepper. I used my sandwich slicer tomatoes since I didn’t have the sauce tomatoes. It didn’t matter, it thickened up perfectly. I didn’t use fennel. The finished product is so delicious! A little sweet with a spicy finish. Thank you CC! As always, your recipes are the best. Love your book. People that don’t have it, should get it.
I made this a couple of months ago and today was my 75th birthday, so I gave my children all a bottle each and opened one of mine to try. DELICIOUS!!! The kids all said make more Ma, so as we have buckets of chillies, red onions and tomatoes and I am sooo sick of making chilli jam that they all love I’m about to make a double lot. Thanks for the great vids. I got started fermenting peppers and am hooked. I found Rocoto peppers and they are my favorites so far. Very fruity and the yellow ones are pretty spicy. I add some Carolina Reapers to get the heat up and might add a green Cardamom seed to add to the flavor. If you haven't tried these, I highly recommend them. The sauce has a very fruity flavor that is superb. My 12 year old son pours this stuff on everything. I also use orange, red and yellow bell peppers to change the colors in my mixes. They have slightly different flavor profiles which add a nice touch. The key is fermentation and anyone who hasn't tried it needs to. Thanks again.

Great videos...love the content! I used basically the same recipe except half of my tomatoes were roasted, and I added a few cloves of garlic to my tomatoes when I roasted them. Turned out fabulous. Based on the reactions from my family and friends, I will be making quite a bit of this next time!
First recipe I ever try from ChilliChump. I had to substitute a few things. I used fermented cherry tomatoes for all tomatoes, so I omitted the salt. The public market bought so called piri piri chillies where not as hot as my home grown regular Cayenne peppers. Something was wrong about them. So I added 1.4 grams of fresh Trinidad Moruga Scorpion Butch T., for the extra sting. Did not change anything else. I was tuned on Frank Zappa when I home canned it in 1 cup (250 ml) jars. I labelled the jars as “Poodle bite hot chilli ketchup”, because that’s Dirty Love ! Thanks ChilliChump !

Late to the party but I made something similar with leftover pickled hot peppers after watching this video. Fewer aromatics and less salt but I also added anchovy-based fish sauce and whole pimento/allspice. I think a fish or soy or bean sauce/paste is a nice shortcut to get that depth of flavour that only fermentation can provide. And an allspice habanero scotch bonnet combination is borrowed from West Indian cuisine, it never fails. Time to binge-watch the rest of your stuff!
In a restaurant I had the pleasure of Jalapeño ketchup for my fries. I've never seen it in any grocery but wow, so awesome! Thanks for the video, thumbs up!

I just finished mine. It's perfect. I put only chillies (20) and because I can't smoke them, I passed them through the BBQ for little while until they take some colour. All the rest as you say. I don't have a slow cooker so it took me 4 hours in medium- low heat and lower at the last hour,to reduce it. It's perfect. It's spicy enough but not too hot. Excellent. I got almost the amount you got (1,2 lt) and I have 3,85ph. Perfect all the way. Thanks for the recipe.

Nice thing that we saw your small smoke box, some inspiration for those on a strict budget. In India the ladies place the items to be smoked (say 3 to 4 boiled potatoes) in a metal bowl or utensil, leaving a void or gap in the centre. A burning coal/coals are placed in this area and ghee(clarified butter) is spooned on to them. A simple lid is used to cover this for around 5 minutes or so!
I grow tomatoes in addition to peppers in my greenhouse so always have a lot on hand to make things with. I would 100% recommend that anyone making sauces, passata , jams and relishes or anything like this where you need a smooth, seedless and sieved sauce that a food mill is great (vs a sieve). Great channel btw.
I have been recommended by a few people now to get a food sieve...I may just have to get one. I have been getting away with just using a normal sieve, but maybe it is time to upgrade! Thank you for watching!

A few weeks ago, I started trying to make fermented ketchup. Tomatoes and jalapenos. I don't know how far it strays from tradition, but I'm hoping for the best. I smelled it the other day, and it smells pretty good.
iam so glad i found your channel! I loaded up 6.5kg of tomatoes self grown into big pots and tomorrow i will make them into ketchup! i will make 3.2kg with chillies and 3.2kg without chillies because iam the only one in my household that likes spicey food. sadly i dont have a slow cooker so i will have to do this the hard way.
got my ketchup mix in the crockpot now can't wait to try it out. couldn't find fennel or coriander seeds so I used cilantro and left out the fennel and added a little extra vinegar

A tip for your subscribers. A smoker box can be made with a couple of tin cans or one tin can and aluminum foil. The tin cans can't have a coating on the inside. You have to know how to handle a drill. But it isn't that hard. Also store bought liquid smoke works well. Thats a lovely barbecue.😊
This is an Incredible Sauce! It's way more than Ketchup - I use it on everything, and have been known to just eat it with chips as a dip late at night. Today, for my second attempt, after smoking the Peppers, Onions and Tomatoes, I added Gochujang to achieve additional depth of flavor. Thank you so much for doing these videos. YES SPICY KETCHUP IS AWESOME i do love it and a little bit of honey and garlic> i made a green jalaeno sauce use honey , garlic, onions, oil, cilantro, lime,, salt pepper, the honey really made it
I'd recommend adding some cloves to the recipe too - even if you think you don't like them, they add a really rich savoury flavour that goes really well with the tomatoes.

I made the Chili Ketchup and I think I went a bit overboard on the amount of chili peppers, adding more and hotter peppers. I must say, it turned out to be heavenly delicious and hellishly hot. I gave a bottle each to two friends and now they say they want more and are even willing to pay for it. Great stuff.
Stumbled onto your channel quite by accident while viewing some videos for some additional tips on making hot sauce (I've always made my own as I cannot stand store bought; it's never as tasty and certainly not hot enough for my tastes). Anyway, love the two videos of yours I've watched so far and have not subscribed. Will be watching the rest of your published videos over the course of the coming weeks. Keep up the great work, buddy. (BTW, I'm a native from New Mexico here in the states. If there's one thing we seem to know, it's our peppers. Love this recipe! Another great video. I will be making this for sure when all my peppers and tomatoes are ripe this year! The slow cooker is a great idea. I might try roasting the peppers first and then try the smoked ones and make two batches to compare the taste.
Hey Chillichump....I’ve have been binge watching your videos...great channel....I was born in Manchester, raised in Canada and now live in Texas...a smoker or a pellet grill would be a great addition to your backyard...in the mean time might I suggest an “a maze n” pellet tube and a “frog mat” for use on your Weber grill for smoking all kinds of things, both available online....keep up the great work.

Great stuff. I told my mum you use of a slow cooker cuz she has the exact same one! CHILLI JAM was on the go over night! Pressure cooker relegated!!! She just discovered RUclips.. although i sent this video after she started the batch.... ✌One question though. She has half dozen Scotch Bonnet plants 4foot tall in tubs that produce a helluva lot of fruit... But they are not as HOT as last year. Should the chillies be re-potted ..or do you use special feed. My Mum lives in southern Spain & has a very flowery garden with big rosemary bushes growing randomly . The bees love em . Cheers from MADRID😁
I'm glad you are both enjoying my videos! With regards to get plants....many chilli plants produce the best pods in the first 2 to 3 years. You could try reporting into fresh compost (like the soil recipe I show in this video: ruclips.net/video/hbcRpC7vG-c/видео.html). You should be giving them fresh potting soil each year anyway....chilli plants need a lot of nutrients. Coconut oil acts as an amazing preservative as well due to its antifungal and anti bacterial properties

A few weeks ago, I started trying to make fermented ketchup. Tomatoes and jalapenos. I don't know how far it strays from tradition, but I'm hoping for the best. I smelled it the other day, and it smells pretty good.

iam so glad i found your channel! I loaded up 6.5kg of tomatoes self grown into big pots and tomorrow i will make them into ketchup! i will make 3.2kg with chillies and 3.2kg without chillies because iam the only one in my household that likes spicey food. sadly i dont have a slow cooker so i will have to do this the hard way.

got my ketchup mix in the crockpot now can't wait to try it out. couldn't find fennel or coriander seeds so I used cilantro and left out the fennel and added a little extra vinegar

A tip for your subscribers.
A smoker box can be made with a couple of tin cans or one tin can and aluminum foil.
The tin cans can't have a coating on the inside.
You have to know how to handle a drill.
But it isn't that hard.
Also store bought liquid smoke works well.

This is an Incredible Sauce! It's way more than Ketchup - I use it on everything, and have been known to just eat it with chips as a dip late at night. Today, for my second attempt, after smoking the Peppers, Onions and Tomatoes, I added Gochujang to achieve additional depth of flavor. Thank you so much for doing these videos. Regardless, I'm in Houston Texas - one would think the home of Hot Sauces, but your recipes outdo anything I can find. Going to try making some ketchup for the first time this weekend using this recipe as my guide. Planning to use habaneros and jalapenos as the chilis. I've probably watched this video about a dozen times now. Love all of your videos!

YES SPICY KETCHUP IS AWESOME i do love it and a little bit of honey and garlic> i made a green jalaeno sauce use honey , garlic, onions, oil, cilantro, lime,, salt pepper, the honey really made it
I'd recommend adding some cloves to the recipe too - even if you think you don't like them, they add a really rich savoury flavour that goes really well with the tomatoes.

yes spicy ketchup IS EXCELLENT I LOVE IT GR8 CHOICE! I LOVE JALAPENO'S FAVORS i dehydrate my peppers into a Jalapeno powder Or roast em in the oven and dry out . grind up is called TEXAS GUN POWDER > This is what i sprinkle on JUST ABOUT EVERY THING YUM fried eggs just about every thing > Yes even in spaghetti sauce
In the states, that would probably be considered an awesome "cocktail sauce", commonly used with shrimp cocktails and the like. Looks good!

I made the Chili Ketchup and I think I went a bit overboard on the amount of chili peppers, adding more and hotter peppers. I must say, it turned out to be heavenly delicious and hellishly hot. I gave a bottle each to two friends and now they say they want more and are even willing to pay for it. Great stuff.
Stumbled onto your channel quite by accident while viewing some videos for some additional tips on making hot sauce (I've always made my own as I cannot stand store bought; it's never as tasty and certainly not hot enough for my tastes). Anyway, love the two videos of yours I've watched so far and have not subscribed. Will be watching the rest of your published videos over the course of the coming weeks. Keep up the great work, buddy. (BTW, I'm a native from New Mexico here in the states. If there's one thing we seem to know, it's our peppers. I love making my own sauces, especially using my own homegrown peppers. There is a certain pleasure in eating something which you nurtured from a seed, right through to making the sauce! I hope you enjoy my other videos too.
Love this recipe! Another great video. I will be making this for sure when all my peppers and tomatoes are ripe this year! The slow cooker is a great idea. I might try roasting the peppers first and then try the smoked ones and make two batches to compare the taste.
Looks good, and if you omit the sweetener it would also make a great base for any other red sauce.

Hey Chillichump....I’ve have been binge watching your videos...great channel....I was born in Manchester, raised in Canada and now live in Texas...a smoker or a pellet grill would be a great addition to your backyard...in the mean time might I suggest an “a maze n” pellet tube and a “frog mat” for use on your Weber grill for smoking all kinds of things, both available online....keep up the great work.

Store bought ketchup are mostly sugar solutions. This ketchup has all the healthy ingredients except for some sugar. Thanks for another informative video

✌One question though. She has half dozen Scotch Bonnet plants 4foot tall in tubs that produce a helluva lot of fruit... But they are not as HOT as last year. Should the chillies be re-potted ..or do you use special feed. My Mum lives in southern Spain & has a very flowery garden with big rosemary bushes growing randomly . The bees love em . With regards to get plants....many chilli plants produce the best pods in the first 2 to 3 years. You could try reporting into fresh compost (like the soil recipe I show in this video: ruclips.net/video/hbcRpC7vG-c/видео.html). You should be giving them fresh potting soil each year anyway....chilli plants need a lot of nutrients.
