I thought the hominy corn is usually 'soaked' in water for a couple hours as it takeslong to get soft.

This is what I call a belly warming meal and it fills you up too. 😉 I’ve never had it but I’d try it.
Question…can the dry corn be pre-soaked overnight to cut down on cooking time?
Wherever Deddy is purchasing the Coconut he should let the store know about it.
Yes family you can soak the corn overnight or place it in a slow cooker if it’s available to you. It will be ready by morning. Bless you ❤

Yes, something needs to be done about these rancid,rotten coconuts which are sent abroad. I often have to resort to coconut milk from a can after paying so much money for fresh ones. Hominy corn porridge was really filling growing up as a child in Jamaica, especially when there were many mouths to feed. It can be time consuming to make, so I start it in my crockpot overnight. Love this recipe, I must try this with the plantains.

I love cornmeal porridge. I make my porridge the same way Mom makes it with cinnamon bark, fresh ground nutmeg carnation milk, etc.
BTW, my family is Kittitian, and depending on the context, the word "fresh" can mean without any flavor to us too.

Love hominy porridge...my mom used to add rice to it and the rice would cook out and thicken the porridge (white rice that was already cooked).
