I did some tablet weaving about 15 years ago on an ashford samplet loom frame. I made a few bookmarks but that was it. Recently I started doing historical re-enactments and would like to make some trim for costumes. I love this pattern an want to make it. I am assuming that you start the reverse at the end of a forward pattern repeat,but you do not state this in the video.
I do near the very end--at the 4:50 mark in the video, I have the pick sequence: 1 through 8, then to reverse, start at 4 down to 1, then 8 to 1 and repeat 8-1 until you reverse again.

The loom was made by a woodworker friend using designs found online. Search for "monster inkle loom" and you should find it.

It varies from pattern to pattern. Some can be done in full reverse, but others turn into chaos and mayhem when you do that.
