Hi im a chef from Genoa very close to recco ...i have to say im impressed.. i love the channel :) i saw somebody commenting to put it with tomato sauce... there is another version of this in Recco called Pizzata it is exactly the same but u add hi quality tomato sauce some anchovies capers and oregano... and small dark olives...very nice too!

I've watched about four of this guy's video and I love this channel. I can tell this man loves doing this and his voice never fails to calm me.
One reason I like watching Chef John is he's giving very serious tips and then he'll say something funny like "i saw it on a german website video." and I have to pause the video while I laugh.
Only just started baking, this was my Third ‘bread’ it was absolutely delicious, loving the humour you bring to everything. Xxx

I live near Recco and you are doing a great job here. I must stress that this recipe is protected ,this means that only the focaccia di Recco made in Recco can be called by this name. Made anywhere else ,it must be called focaccia di formaggio. Translated means cheese focaccia. Now isn't that interesting.

I would serve this with the spicy marinara you used for your calzone recipe or maybe an Indian tomato chutney. It needs a little something to cut the richness of the cheese but otherwise an excellent recipe. Another home run for Chef John!

The tearing part looked enjoyable to me too. Maybe because when you have some thin and delicate dough, you're usually not supposed to let it tear. Probably why shattering the top of creme brulee is so fun too.

FYI: A jury of extremely picky Italian chefs just gave this video their unanimous approval while literally laughing at Gordon Ramsay's attempt at baking focaccia. Damn that felt good to see. Keep it up Chef John!

Just seeing this now even though it's from 2013. This fugassa from Recco is one of the greatest food experiences of my life. Incredibly simple food but such a wonderful combination. Been trying to find me way back after 20 years but life gets un the way. I'm going to try this one and fo all but finding the cheese is the key. Wish emergency luck. Thanks for recipe and video>. I know you insist that there are no acceptable cheese substitutes.. but there are! I first made this when I had a local cheese shop that had almost everything.. and was able to readily source some Stracchino. I've since moved a bit rural, and wanted to make it. NO JOY!
I found some joy, my joy has returned! A mild non flavored Havarti is fanflippin-tastic! The melt is the same, the flavor though probably slightly different, time has erased any difference to me... this was certainly just as mouth watering.
Before I tried the Havarti, I tried a young Asiago. That wasn't bad, but it wasn't this. That is simply something different.
I'll be travelling back to SoCal for the 4th of July, and will make it with both cheeses and compare.

the air ensures that the two layers don't stick together while you're working. make the holes so it doesn't ballon as much, though it probably will a bit.

+mrcmxoner Quesadillas are tortillas that are cut into triangles, and filled with cheese along with whatever else they want to fill it with. This is an italian flatbread filled with cheese, so the difference is that quesadillas use tortillas, this uses a flatbread.

Watching you stretch out the dough made me remember my great-grandmother's German Strudels, with the "newspaper thin" dough that is stretched super thin, then layered in on itself to form airy noodles. --- And then you go and say "Y'know that kind of reminds me of something I saw on a German website one time." --- XD
