- This is Part 2 of me trying to answer the age old question... "Whether to cook the brisket fat side up or fat side down? The first cook was on a @ZGrills Pellet Grill with a choice brisket, in this video I'll be following the same cooking method but I'm using a Prime Brisket and Ill be cooking on a @TraegerGrills pellet grill. I always say the fat goes between the heat and the meat. On a pellet cooker if I cook it on the grate closest to the deflector I go fat cap down. If on the top rack like on my Lonestargrillz, I go fat cap up. I always go fat cap up on the offset. Good cook bro.

Great cook Joe. That brisket was nice and juicy. I always thought that the fat side up was the best way to cook a brisket cuz of all the tasty fat rendering down onto the whole piece. Thanks for sharing 👍🏾❤️🔥⚗️

Hey Joe! Man I used to be so stubborn and didn't want to give the fat side up a chance. I tried it on the pellet smokers and it did good but the real difference came from the Lone Star Grillz! 1/4 inch fat and let it render to the point where you can pierce the fat with your finger with zero resistance. Thats when you know it's money!! Good cook as always my man! Hope you and your family do well during these holidays!
