The BEST Yakitori at home (Yakitori Sauce from Scratch Recipe) | OCHIKERON | Create Eat Happy :)

  • Yakitori is grilled skewered chicken. Very simple yet delicious.
    I received many requests for Yakitori sauce (Tare) recipe, so I decided to make this tutorial. Also, I will show you how to make salt (Shio) flavored Yakitori, too.

    Yakitori (Tare and Shio Flavors)
    Difficulty: Easy
    Time: 30min
    Number of servings: 12 sticks
    Ingredients:
    200g (7oz.) chicken thigh
    200g (7oz.) chicken breast
    2 white parts of long onion
    ((Tare - Yakitori sauce))
    * 100ml soy sauce
    * 100ml Mirin (sweet sake)
    * 2 tbsp. sugar
    ((Shio - salt))
    salt and pepper
    lemon wedges if you like
    Shichimi-togarashi (seven flavor chili pepper) if you like
    Yuzukosho (Japanese chili pepper paste) if you like
    Directions:
    1. To make Tare (Yakitori sauce), place soy sauce, Mirin, and sugar in a pot and bring to a boil. Then turn down to low and simmer for 5 minutes. *You can store the leftover sauce in the fridge for a month and use it for other dishes like Teriyaki.
    2. Remove the skin from the chicken if desired. Then cut into small bite-sized pieces. Cut the long onion into 2/3-inch pieces. Season the chicken breast with salt and pepper for Shio (salt) flavor.
    3. For Tare (sauce) flavor, put long onion and chicken thigh alternately onto bamboo skewers. For Shio (salt) flavor, put seasoned chicken breast onto bamboo skewers.
    4. First, cook the Shio (salt) flavor. Heat a thin layer of cooking oil in a frying pan, place Shio (salt) flavored Yakitori, and cook on high until golden brown on both sides. Then cover and cook on low for 3 minutes until done.
    5. Next, cook the Tare (sauce) flavor. Heat a thin layer of cooking oil in a frying pan, place Yakitori with long onions, and cook on high until golden brown on both sides. Then drizzle with 3 tbsp. of Tare (Yakitori sauce), cover, and cook on low for 2 minutes. Then cook on high for 1 minute until the sauce thickens.
    6. You can enjoy the Shio (salt) flavored Yakitori with lemon wedges, Shichimi-togarashi (seven flavor chili pepper), or Yuzukosho (Japanese chili pepper paste) if you like.

    I just made it and it came out sooo good. But it's quite different from the one used at restaurants here. Yakitori comes with a thicker but lighter sauce. Does it have another name or there's another sauce used for yakitori?

    I haven't had yakitori in a long time so I'm definitely going to try this. Please remember to not consume alcohol while you are pregnant, it can lead to Fetal Alcohol Syndrome. Even a single glass of beer or wine puts your baby at high risk for malformation. Wishing you a safe and event free pregnancy!

      Cooking with alcohol on high temperatures should be ok because the alcohol evaporates very quickly. But yes, a very important reminder!

    I'm definitely going to try this! I've cooked some of your other dishes and your instructions are so easy to follow, you've even inspired me to make my first bento box!! For the Tare flavored yakitori though, the people I live with aren't huge fans of onion, is there something else that I could use instead that would taste just as yummy?

    so.. in the video where there's her husband, she said that usually they don't cook the chicken after they put the tare sauce on it.. will it work well in this one as well? like, cooking the sauce longer so it'd be thicker but didn't cook it any longer?

      it gets cooked off in the recipes so you are not really consuming alcohol, but the closest i would say is vinegar, just add sugar, or just take it away all together

    Quick question; could you make the tare yakitori with chicken breast instead of thigh meat? I'm not a fan of the texture of thigh meat. ^^;

      on the video, she used both boneless chicken thigh and breast. though she didn't use the yakitori sauce on the chicken breast, i'm sure you can i you wish to. just don't overcook the breast. :)

      lol. i made that same mistake when i read "sake". it is not the alcohol kind but the kind you can just buy at a grocery store where they have the asian stuff. it's called MIRIN (japanese sweet rice wine). it's made with alcohol but it's for condiment purposes only.

      Whenever you cook with alcohol like sherry cream and white wine;the alcohol goes away when you cook it.Hm, maybe you could try and use apple juice as a substitute.
      I looked it up and found this info:
      You could also use Vinegar. Mirin has a small amount of alcohol. If you're looking for a nonalcoholic substitute, vinegar is a good replacement. Rice wine vinegar offers a similar taste to mirin, but any white wine or distilled white vinegar will work. Use 1 tablespoon vinegar and a 1/2 teaspoon of granulated sugar for every 1 tablespoon of mirin. The type of vinegar you use determines your final product. For example, the vinegar flavor might be more pronounced with distilled vinegar, while it might be more subtle if you use white wine or rice wine vinegars.

      If you type in mirin substitute in the youtube search bar a video will come up that shows you how to make a mirin sub. that doesn't involve sake I've used it a few times before I actually found mirin and for the most part tastes the same hope this helps =)

      When I google it, long onion comes up applied to green onions/scallions but it definitely looks more like leek to me!

      In Japan, the long onion they use frequently is a welsh onion. It's not the same as scallions or leeks, even. It can be difficult to find outside the countries that use them a lot.

      Sara Schultz i've been wondering about this for a while, but the leeks i've been buying at the store don't seem to be the same thing. Japanese leeks tend to be really long and have a lot of white part, where as ours are kind of short and don't have much white part at all.

      Soullessnut I was just about to speculate this when I read fuuchan27's comment that it's a different member of the onion family entirely that we don't even have here! I guess leek is still probably the closest substitute though? Does anyone know if the flavor is similar?

      Sara Schultz Scallion is definitely closet substitution to welsh onion.I can only eat the scallion and the white part of welsh onion - only if you roast them like in this case, the green part is very slimy and pungent that it makes me gag just thinking of it.I used to mistake these two too but once I found a bundle of leeks at one of the imported store and turn out leeks are so freaking expensive ( 2 stalks cost 3 $ crazazyyyy ) whereas welsh onions are fairly cheap

      tf rice vinegar gonna make it sour use white wine or skip it add a little more sugar since morin is sweet

      At Asian markets they sell non-alcoholic mirin if that's the problem, otherwise you can use some sake. Rice vinegar is also fine just be careful how much you put you'll need to add sugar if you use vinegar
