I'm sorry, but I'm not too familiar with Phillipinian cuisine. I don't know what comparable things you have there. Ají panca is a paste made of a very mild chili pepper, almost like bell pepper and ají amarillo is a paste made of a chili that is a bit stronger but not crazy strong. In the end you could also just omit and use some sort of chili powder you can get your hands on. It will still be delicious without the Peruvian chilis and just a little chili powder instead.
You can replace them with a little bit of another chili that you have available but in the end you don't feel that the chicken is spicy. You can follow the rest of the recipe as she indicates in the video. By the way, congratulations to the lady who kindly shared this iconic recipe from Peru.

In Peru we don’t smother rottisserie pollo a la brasa in green aji sauce or any other sauce, for that matter. It is more like a dip, or side condiment for the fries that usually accompany the chicken.

Hi - Great recipe but the salt in the marinade seems to be really low. I realize there is also soy sauce but 1/2 teaspoon is not enough. I added more and it still was not salty enough. To anyone watching, aim to add 3/4-1tsp PER POUND of chicken

As Peruvian born and raised I’d say that amount of ingredients for one chicken is not enough and lacking some other ingredients as well . If anyone wants the chicken juicy is best to keep the chicken whole and marinated for a whole day or the entire night and is best to do it in an over rather than the grill . It looks good but I don’t know if that chicken would taste like the one is made in restaurants 😢

While mexican food can be prepared in a casual way, peruvian food requires some attention to little details in order for it to be tasteful and delicious. Peruvian cuisine depends too much on balance and equilibrium. Still this is a good straightforward recipe and will be very much appreciated by the american public. On the other hand, latinos may have a different POV, given this is a simplified version of a peruvian dish.
You can make it in a bowl but unfortunately it's not the same because the marinade just flows to the bottom of the bowl. I reuse the same bag at least 10 times before it's unusable. You just flip it inside out and wash it well with soap and water and hang it to dry over a spatuala to keep it open and dripping.
