    I bookmarked this recipe waiting for my panca to arrive. I made it yesterday along with the aji verde. It was such a hit. My son said it was the best chicken and sauce I have ever made. He was right. I saw the chicken on a travel the world eating channel and thought I must have this! Thank you for sharing your talent.

      @@Greenhealthycooking We finished the chicken off tonight making home made corn tortilla tacos. I used, your marinaded onions, crumble cheese and the aji sauce. I made corn chips for dipping. Thank you so much. Everything was a taste treat delight.

I should recommended more time marinating, and despite the fact that it might not have so much other ingredients (and I truly understand that there are not all of them over there) it looks amazing.     Aji verde sounds Mexican I only know aji de pollería which is yellow and that green for me is just another type of chilli sauce or cream as we call it

      I'm sorry, but I'm not too familiar with Phillipinian cuisine. I don't know what comparable things you have there. Ají panca is a paste made of a very mild chili pepper, almost like bell pepper and ají amarillo is a paste made of a chili that is a bit stronger but not crazy strong. In the end you could also just omit and use some sort of chili powder you can get your hands on. It will still be delicious without the Peruvian chilis and just a little chili powder instead.

      You can replace them with a little bit of another chili that you have available but in the end you don't feel that the chicken is spicy. You can follow the rest of the recipe as she indicates in the video. By the way, congratulations to the lady who kindly shared this iconic recipe from Peru.

    hey thanks for the recipe, it looks delish! want to try making it for dinner tomorrow, what would you suggest having on the side? i was thinking potatoes or rice but dont want to destroy the dish! trying to keep it traditional :)

    In Peru we don’t smother rottisserie pollo a la brasa in green aji sauce or any other sauce, for that matter. It is more like a dip, or side condiment for the fries that usually accompany the chicken.

      That may be true. But visually it's appealing in a video like syrup being poured on pancakes. The show gets more attention.

    Ok, my mouth is watering as you cut that chicken. Whole foods sell chicken already spatchcocked, which helps. Wait a second, I have to learn how to say those 2 ingredients so i can share this recipe,lol. will probably have to order these online. Never heard of them. In the spice dish I think i saw oregano which you didnt mention is that with the rosmary?

      @@jeanineskitchen2607 the ají panca isn’t hot. Only the ají amarillo is and you could simply use a lot less. With these amounts used in my recipe my kids eat it :)

    Hi - Great recipe but the salt in the marinade seems to be really low. I realize there is also soy sauce but 1/2 teaspoon is not enough. I added more and it still was not salty enough. To anyone watching, aim to add 3/4-1tsp PER POUND of chicken

      Any kind. You can even use light beer. Since you are using little I recommend using your favorite beer so you can drink the rest of the bottle :)

    Your powder ingredients in the bowl look like five different condiments but you only mention four: cumin, rosemary,salt & pepper. Am I missing anything here? Thank you!

    As Peruvian born and raised I’d say that amount of ingredients for one chicken is not enough and lacking some other ingredients as well . If anyone wants the chicken juicy is best to keep the chicken whole and marinated for a whole day or the entire night and is best to do it in an over rather than the grill . It looks good but I don’t know if that chicken would taste like the one is made in restaurants 😢

      @@kitlove1247 Not really. Actually she is warning some viewers against too high expectations on the results. While mexican food can be prepared in a casual way, peruvian food requires some attention to little details in order for it to be tasteful and delicious. Peruvian cuisine depends too much on balance and equilibrium. Still this is a good straightforward recipe and will be very much appreciated by the american public. On the other hand, latinos may have a different POV, given this is a simplified version of a peruvian dish.

      You can make it in a bowl but unfortunately it's not the same because the marinade just flows to the bottom of the bowl. I reuse the same bag at least 10 times before it's unusable. You just flip it inside out and wash it well with soap and water and hang it to dry over a spatuala to keep it open and dripping.
