    Seriously though, why do professional chefs overdo the salt so severely? Reminds me of a Josh Weisman video where he went to 24 places for fries and rated all 24 of them as not using enough salt.

      Salt enhances flavour and helps the different flavours and aromas to spread.
      Besides that, the quantity of a serving in fancy restaurants is a joke and most people won't feel overwhelmed by any strong flavour in such small amounts.

      In this case, as he even pointed out, the capers are brined, so they're already super salty and he didn't account for that. He didn't intend to make it that salty.

    Chefs and cooks are big on adding too much salt and sugar to their recipes. Flavors has been replaced with refined sugar and sodium.

    It's normal. I'm a chef in an old age center. ANY TIME I try to give them something different or more gourmet, they complain. They only want what they are USED to. Same spice mixes, same taste, same ingredients... It's part of their comfort zone. So it gets kind of boring after a while, making mashed potatoes for every meal is a soul killer... I can only get creative with desserts because almost ALL of them have a really big sweet tooth.
    It's THEIR life, what is left of it, so I try to make it as much the way they want it as I can... Even if it bores me, it's the least I can do for them...
    What is funny, is that a LOT of the people where I work are old nuns and priests, and THEY are the worst complainers out of the whole lot...

      The point about the spices being comfort zone is so true.
      Although it's not the case here.
      Salt is a very specific issue, unique to everyone.
      Many people, especially older ones, develop high blood pressure and sodium is a basic factor for that.
      Personally, since I've been diagnosed with high blood pressure, I've become more conscious with salt.
      I don't like unsalted food, but I definitely can't enjoy overly salted food anymore.
