Making Food Monday: Pressure Cooker Arroz con Pollo Colombiano/ Colombian Rice with Chicken

  • The Smartypants mommy was asked to make an International dish that the kids hadn't tried before. She stepped out of her comfort zone and made some food from Daddy's childhood, Arroz con Pollo Colombiano/ Colombian Rice with Chicken in the Pressure Cooker.
    Ingredients:
    4 chicken breasts, cubed
    1 onion, chopped
    2 cloves garlic, minced
    2 packets Sazon Goya con Azafran (check the latin food aisle)
    2 tbsp chicken bouillon
    1 tbsp tomato paste
    1/2 cup bell pepper, chopped
    1 tbsp Cumin
    1/4 cup cilantro, chopped
    1 1/2 cups veggie mix (carrots, green beans, peas. ...corn not traditional, but it was determined to be "pretty good" by our resident Colombian)
    1 1/4 cups white rice
    2 1/2 cups water
    1 bay leaf
    Cube and brown the chicken on the "sear/roast" function until the chicken is nearly white, then add the onion, garlic, and bell peppers. Cook until the onion is translucent.
    Add the rest of the ingredients, stir, placing the bay leaf on top last (so you can retrieve it easily later) Seal the pot, choose the "chicken" function, lower the timer to 17 minutes, and push start. After the cycle, allow the pot to pressure release naturally (wait for the pin to drop on it's own) then, open... stir... pack into a bowl, place a plate upside down on top, flip the whole thing over, remove the bowl (you should have a pretty mound of arroz con pollo) sprinkle with fresh cilantro and enjoy! :)
