I asked the clerk at the corner store of she knew where I could find koji or starter. She was so happy I asked that she called her mom who showed up 5 minutes later with a white plastic bag full of it and gave it to me for free. I was confused about how to reciprocate that kind of generosity but now that it's been with me for 5+ years I just get it.
For anyone who doesn't know... once you strain the sake from the rice mash, do not throw it away! The rice mash is sake lee's and can be used for pickling, marinating meats and even for skin care!
For everyone else who wants to try this, you use whats called an air lock to let the gases escape and not let any contamination in, it's not really a good idea to just leave the lid open

Dont let it just open, use a "fermentation tube" its a little tube mostly made of plastik that filled with a bit water so the gases can get out but nothing get in the jar, i brew my own Met (Honey Whine) and i think i try Sake :)
Honey Wine and mead are technically different things. Honey wine is usually honey and white grapes, mead is honey. It does get a bit more complicated as true old fashioned meads had botanical and fruit mashes included.@@bokrugthewaterserpent3012

Hey, i wanted to ask... How much is the cost of materials and the operation costs? i mean, how many hours you spent doing this (not counting waiting time), and if its better to do it yourself or buy one and to compare, buy one is as good as the one you made.
Do not get baking yeast it's not strong enough for making wine in general and I'm pretty sure it will not be good for this you have to get specifically yeast wine which is a completely different strand of yeast compared to the one we use for baking.
If koji is responsible for the breaking down of starch in the rice grains into glucose....could you just dump a bunch of amylase on to some rice and eventually get the same product?
That was a great video man! I hope the next fermentation journey you go on will be KOMBUCHA, it’s super healthy and it’s awesome to make. Although i have to say… I don’t think kombucha is very common in korea? It’s more of a cali girl / smelly hippie type of drink but i loveeee it
I'd do this, but I'm allergic to koji mold. I've never heard of anyone else being allergic to it, but I've done a skin-scratch test and that's definitely what's causing a reaction.
I want to know how much this cost and time and how much you got... And if it is jinjo jumai nigori or whatever you made... Making hard cider or apple jack is sooo much easier than this... If you buy cider... From a farm.. and open it and put sugar in it and put cap back on and burp it.. in a couple of days you have hard cider... But if you then, use a simple still aka a steam deck and a copper tube and dripper you get apple jack... Korean fried chicken is the bomb.. I loved it with wasabi mayo and truffle mayo.. it is the absolute bomb.. I did the garlicky soy.. and the spicy ..

One note about the water: use mineral (still) or bottled water instead of tap. Chlorine in tap water is a huge nope for these microbes.

Can you do it without the citric acid? Also, I thought citric acid inhibits fermentation..surely sake brewers don't use it?
