I rarely comment Paolo, but it suddenly dawned on me that your style of narrating harkens back to my childhood when the announcer or narrator would kindly, and gently walk you through a subject or documentary. As an adult, it's a very relaxing style, and I love it! 😁👍✌
Fun fact: Singing to time certain processes was extremely common all around the world prior to clocks and timers becoming ubiquitous. People would sing as they cooked, blacksmiths would sing as they heated metal, etc.
Fascinating to see the sake-making process! About a year ago, a local sake brewer in my city had a tasting-and-learning session where participants could, for a reasonable price, try the whole lineup of their offerings. It was an amazing experience…but unfortunately I underestimated how much I had drunk and could barely stand up at the end. Anyway, it was a ‘learning’ experience in more ways than one. 😅
@@rastaralph7154 The bottle I have at home now is 15% but it can be a little higher. The dangerous part though is that it’s often really smooth, and it’s served in tiny cups so we don’t feel like we’re drinking much. Until we try to stand up. 😆
"back in the day, brewers would sing to time the process" that fact is as heartwarming as it is adorable! kinda helps me imagine all the love being put into making the sake straight from the first step. handmade sake really is something else. there are so many other cool and innovative things happening here! the table also being a scale to measure water content as the rice ferments, using locally sourced mineral water, filtering the sake in bags manually... it's just a treasure trove of information and sake mastery! thank you so much as always for your incredible videos, paolo!

I can't even imagine... the hundreds of years of trial an error with temperature, ingredients, and learning to use koji mold for sake it took to perfect this recipe. I'm just amazed.
@@menohaveaname Seiko makes watches that range from entry-level, $100 watches to insane handmade pieces that cost 10k+, respected by the biggest watch snobs. They offer something for everybody which is why they are so loved globally. I'm sure you could find something you could afford my friend.

unexpectedly this is one of my fav channels, before japan wasnt interesting to me but after seeing these vids. japanese people are the most kindest , disciplined and ii love the culture. japan is surely on my must go countries
So cool! I visited the Hakutsuru Brewery in Kobe in 2018 🙂 The museum they have is really cool and you can taste test different Sake there aswell. Also, the Sake ice cream was really delicious. The souvenir t-shirt I bought is one of my favourite to wear 🙂
Thanks for the video, Paolo. More hand-work as I expected when I saw the factory. Also interesting: the process reminds me of brewing beer. Luckily we can use already malted wheat for brewing and don't have to malt it on our own.

発酵中の酒母タンクのなかに顔を近付けると酵母の発酵で出た二酸化炭素が高濃度に貯まっていて、刺激がつよすぎて涙がでて来る。
炭酸水飲んだ後のゲップが鼻から抜けたときみたいなツーンとする感じ

I think the "highest" quality one is the one that's $240... though sake can get pricier than this for sure
