It's called a salt pig because the name originated in the northern English and Scottish regions, where the term "pig" means an earthenware vessel, where the interior is unglazed so the ceramic will absorb moisture that would otherwise clump the salt.
I just came back and watched the video for a refresher. I made this last year for the first time, and it was amazing. It sure did taste good when I got sick. I don't have as much freezer space this year, so will use some of it for soup and freeze some. Thanks for sharing!

The little bit of acid added to the pot is supposed to make the pores in the bones more pliable, so they will open and allow more collagen to flow into the stock (stock is from bones, broth is from meat - since most of us use both I guess it's now taken for granted). At least that's what they preach on America's Test Kitchen.
I also make my bone broths in the Insta Pot.... but I use the “Pressure” mode on high and set it at 2 hrs. In total, the time from start to finish is around just short of 3 hrs.
1. Fat is your friend; *SUGAR* is the enemy, but lobbyists convinced us that the reverse was true. 2. I remove the meat from the bones, put the meat back in the pot, reduce it down until almost all of the water is gone, then us a Vitamix to puree/emulsify everything, then freeze the result into pucks that I can drop into anything I want to boost the flavour of. (Adding one to hamburger when you are going to make patties for burgers makes them taste AMAZING!)

Today i borrowed my son's electric pressure cooker specificly to make chicken bone broth (never made before). I knew some people made beef broth in the electric cooker setting it for 4 hrs. But I didnt know how long to cook for chicken. SO GLAD to find your channel! Making my broth tomorrow. Have organic chicken legs ( bigger bones, more nitrition) but need to pick up organic vegies. My biggest concerm is that I do not have a good water filter and have no idea what to buy since all bottled water comes in plastic. Thank you again. I have subscribed.
I’m sorry for your loss 😞 thanks for the video, very informative! I started making bone broth (minus the onions) a few months ago for my dog, he went through his 2nd TPLO surgery and I am trying to do all I can to help him get back to where he was before all this. I don’t use poultry because he is allergic so I use beef knuckles which are huge pigs feet, oxtail, and other big bones full of marrow. First blanch them then I roast the bones on a cookie sheet I read on a lot of sites that it helps with the flavor. The last hour I add some dog friendly veggies and the last 10 minutes I add turmeric which helps with inflammation, really good for arthritis. I pressure cook the bones for about 5- 6 hrs (longer for beef) I take a mini muffin pans and fill up the little cups then freeze, then I take another cookie sheet with warm water and sit it in there when it’s done freezing. Only for like 20 sec then pop them out with a spoon and put in giant zip lock baggie. He gets a few bone cubes melted over his food at dinner time and breakfast. He loves it and he’s getting so much from it. Highly recommend.
That Broth looks amazing! I can practically smell it here, in Tennessee...I will be making some, myself, soon. Getting those Bones to dissolve, that is fantastic!

Nice video. FYI, use the soup setting on the IP Duo and it defaults to 240 minutes...or at a bare minimum, just set it once for 240 minutes on "Soup" and it stays there for your next batch.

I make bone broth all the time. I actually let it go the max time allowed (four hours in my Instant Pot). I absolutely do not release the pressure myself on my batches. It makes such a mess. Once my pot is done I unplug and wait for it to naturally depressurize. Otherwise it spits all over the place and cleaning up fresh bone broth on the floor an counters is not a good thing. It takes a couple more hours...but it is totally worth not cleaning it up.

Since it is only me, I use chicken thighs and cook and then debone them, this way I have chicken to use in many ways and I do smaller batches that will keep in my fridge I just made this without the vinegar and yes it jells and then I pureed the bones and added the puree back to the broth, it will change the color but I do this so I get all the benefits of it all and it only takes a small amount when adding into stews and soups, or just drinking, I also use it to make a gravy for my 2 cats to go on their food( usual some of the chicken also) as they need it to, I only used the bones no veggie or seasons as this I add as I cook. Makes it safe for my cats. I love my INSTANT POT. YES IT JELLED.
Hi the Apple cider vinegar i can buy is with honey would that matter as i would only use a spoon or at the most two spoons of vinegar or should use just cider vinegar great video looks good enjoy
I make mine pretty much the same, except I add two rotisserie chickens minus the breasts; I also add half a cup or so of white wine for acidity. Great stuff!

Yes I do. I like to keep the different types of bones separate. So when I make bone broth, it will be one type. The exception to that is if I don't have enough of one type of bones for a batch. Then I will mix them up. I love using my rib and ham hock bones for pork broth, then cook beans in it! Great flavor!

L Ribota for bone broth, if you make a lot, I recommend the 8 quart Duo 7 in 1 as you can make a larger batch. Otherwise the 6 quart 7 in 1 is good. I own both.

Yes I did. The bones had previously been cooked as I cooked the chicken and ate the meat. You can cook it longer if you'd like, but I find that in the pressure cooker, 4 hours is perfect for me.
What does it mean if your bone broth didn't get gelatinous? I recently did almost exactly what you did, with different bones of course, I didn't have turkey carcus. And my broth didn't get gel like. I did likely mess up on the heat cycles, as I had never used the Cosori before. But then my husband got it cooking good for 4 hours and it seemed right. The bones didn't mush bit they were super easy to crumble. Please help, I'm asking everybody but no responses😣🤔
Too much water for the amount of bones. That's what it boils down to (no pun intended). I try to either pack a lot of bones in and JUST cover them with water, or I'll add chicken feet and/or backs that I purchased separately, for added collagen, etc. to make it gel. Your broth will still be amazing and healthy, but consider throwing in more bones next time.
I wish my wife ,could cook, but she can’t even boil water. I do all the cooking, and try not to waste anything,, she is impossible to cook for. I love different dishes, she loves canned ravioli . Errr
Perhaps you mean Tallow, which is actually rendered beef fat. Rendered chicken fat is often referred to as Schmaltz. And rendered pork fat is called Lard.

I freeze my broth in silicone cupcake molds and then toss them into a zip top bag. It's easy to grab a few when you need them.

i use either a 6 qt or 8 qt, depending on how many bones I have. And 2 hours is fine. I just feel like it gets darker and richer the longer I cook it.

Well, this video is now 4 years old. Gizmo can't get up the stairs to his chair any more. He's in a comfy cushion with lots of blanks on the floor.

Vinegar is not needed with pressure cooker as the pressure forces all minerals into broth.

we can our bone broth. not that it lasts longer than two weeks or so for our family. we can it anyhow.
once the bones crumble, they are safe to give to dogs. Just saying.

Sandy Clifton you are right. I have a cosori. The hours and minutes show different. After 59 minutes the display shows 1 hour. 70 minutes ist 1:10.
