Rich in fiber, vitamins, and minerals, these flatbreads promise to kickstart your day with a tasteful and nourishing punch. Feel free to experiment with these nourishing zucchini and oatmeal flatbreads, different wholesome fillings like, omelettes, creamy avocado, fresh veggies, and your favorite cheeses!
    Instructions:
    Begin by blending the rolled oats into a fine flour texture.
    Clean and cut the zucchini into chunks, then use a hand blender or food processor to mash it into a smooth purée.
    Add a portion of the oat flour and baking powder to the zucchini purée and mix gently to combine.
    Add the remaining oat flour and mix again, making sure not to overmix the batter.
    Spoon ⅓ of the batter onto a hot nonstick pan, then use a spatula to spread the mixture and flatten it to a large sized flatbread with a thickness of about 2 to 3 mm.
    Cook the flatbread over low-medium heat until the edges start to appear dry, approximately for about 2 minutes.
    Carefully flip the flatbread and cook for an additional 1 or 2 minutes, or until golden brown and cooked to your liking.
    Repeat the process with the remaining batter until all the flatbreads are cooked.
    Experiment your wholesome and nutritious zucchini flatbreads with your favorite fillings.
    Ingredients for 3 large-sized flatbreads:
    1 cup (80 g) rolled oats
    1 large zucchini (250 g, cleaned and cut into chunks)
    1 tsp baking powder (optional)

    Fat: 2.11 g
    Carbohydrates: 21.05 g
    Fiber: 3.7 g

    Looks great--love zucchini! Thrilled these are plant-based as I have a family history of Cancer so need to avoid the estrogen and possible BLV in dairy and the lead and choline in eggs. Thanks for sharing

    Could you use coconut flour instead of oat flour ??

      I haven’t done it but in theory yes, you can do this recipe with any flour. You may just need to adjust the amount of coconut flour to get the right consistency 🙏
