Thank you for the video! Just got 5# of Big Jim's today and am roasting on the grill as we speak. Lump charcoal is the hottest but burns down the quickest. Had to add charcoal after each gill-full of chiles were finished roasting. Luckily I just got a shipment of andouille sausage from New Orleans today, so had a styrofoam box with left-over dry ice to cool the chiles in. I'm trying to avoid a water dip so it doesn't remove any of the smoky flavor.
Great video and I will try them putting them on ice and water although the NM natives tell me after there are grilled to put them on a paper bag , will see which way will be easier, thanks for the tip to poke them.
Okay. I must be doing something wrong. My Hatch chilies are disgusting horrible. Just a nasty flavor all together. No where near the taste of an Ortega chili in a can.

I’m from abq but live in Austin tx. My friends have been begging me to roast some green chile

@@freshchile Yes it was a lot easier and after 15 minutes in the paper bag it was easier to peel them off and they tasted so good :)

That is strange! NM Natives LOVE Hatch Chiles! Make sure to roast them to get that delicious flavor we all know and love!
Did you peel them? He didn’t show it in the video but you are supposed to peel them after they are roasted.

Yeah it’s not supposed to taste like canned green chilies fresh roasted green chilies are superior to canned green chilies by far
