  • How to make a great, healthy, Gluten Free, Cajun Gumbo!
    RECIPE:
    For roux
    1 c. white rice flour
    ¾ cup extra virgin olive oil
    Cast iron skillet. Combine and bake in 350 degree oven for 2 ½ to 3 hours.
    For gumbo
    1 recipe roux
    Low sodium organic chicken or vegetable stock (optional)
    2 to 3 packs sausage of choice- brown if raw
    6 chicken breasts- season to taste and brown
    2 quarts purified water
    1 ½ onions - chopped
    3 cloves garlic- chopped (or use garlic powder)
    4 stalks celery- chopped
    1 to 2 bags frozen chopped okra (or fresh equivalent)
    Cajun seasoning (from South Louisiana)- to taste
    Or sea salt, cayenne pepper (any red pepper is okay if you don’t have cayenne), garlic powder, onion powder, gumbo file (optional-sassafras leaves). - to taste
    1 bunch onion tops (green onions)- chopped
    Using a large stainless steel soup/gumbo pot, put 2 inches water or stock in bottom. Bring to boil then add all the roux, stirring continually until dissolved. Add browned meat and all the other ingredients except onion tops (green onions). Cook 2 hours. Add onion tops just before serving.
    Serve over steamed rice. Enjoy.
