EVOO is meant to be consumed raw like in dressings, it has a low smoke point and the fatty acid chains will change when you heat it like this making it very unhealthy. For healthy high heat tolerable oil, you want to user avocado oil.

Could I sub this with Almond flour and avocado oil and it cook the same?
I haven't tried it, but I'm not sure that almond flour would taste similar to a traditional roux
