    I have nothing against beef tartar but that looks like more raw beef than I could handle in a single bite

    You CAN NOT eat raw ground up beef like that! the bacteria on the outside of a steak is different. It does not get cut up and ground into the rest of the meat...this is crazy!

      We have high hygiene standards in the breeding and distribution of beef. Studies show that the parasites that can occur in beef are almost extinct, and as the distribution process is very strictly controlled, in most cases there is no concern about bacteria. 육회, which means raw beef is quite popular dish in Korea. Nobody's crazy ;)

      @@Duck-iq3ip it's not about parasites, it's about the biological fact that when you grind meat, specifically beef, the bacteria that normally wouldn't grow on the inside because of the muscle structure, are now mixed with every other bit of meat.
      You can do this safely if you literally grind the meat on site and have safe storage practices, but I didn't see them use a grinder for anything here and having the ground beef just sitting there in a massive bowl doesn't really inspire confidence that it was *just then* minced.
      This isn't a problem that magically goes away in Korea, or any other country.
