Just did a pizza in the Pit Barrel Cooker for Super Bowl Sunday. It was excellent. I used a deep dish pizza pan. I loaded it with a double batch of dough, tomato sauce, sausage, mushrooms, red onion, garlic, jalapeno, Parmesan cheese, Italian seasoning, and lots of mozzarella cheese. It took approx. 1 hour 20 minutes. I checked on it multiple times, and cracked the lid last 30 minutes, to raise the heat. It came out perfect.

Awesome! I usually have a lot of heat left after a batch of ribs and think that would be a good way to finish each cook - with a pizza.

Great video! So no need to preheat the pizza stone? I am assuming no chance of cracking since you are not using extreme temps?

Sprinkle some corn meal on the stone.
      Or use parchment paper

For a SIMPLE white pizza - Nix the Pizza Sauce and Pepperoni, use Ranch Dressing instead. Chop and drain fresh tomatoes, garlic and onion with fresh basic or Italian parsley.... use everything else you see there and add some bacon.... and you MUST bake an effort like this in the PBC!!!!!!! It adds that wood fired taste. Maybe since I do so many PBC things... I should make you guys a Stromboli/Calzone which are even better and prettier in my PBC.
