    Follow up comment: I used the Edge Pro to sharpen every knife in my house, my camper, and now I'm looking for some neighbors knives to sharpen. THANKS so much for reviewing this tool. I finally have an accurate and uniform angle on my knives, which is the foundation to a sharp blade.

    I own an Edge Pro and have spent hours sharpening all kinds of knives for friends and my personal collection. It is the ultimate system to use for sharpening. A bit of a learning curve at first but once you have the process down. You will get outstanding edges.

    I was a free-hand sharpener for 30 years, and am now an Edgepro user. It's no BS. There is still a free-hand element to this system too, given the fact that the off hand is used as the "clamp." All the feel of free-hand sharpening is still there. It's a joy to use this system :)

    This is an OUTSTANDING sharpener. I have owned mine for almost 3 years (bought direct). I use it for everything from hunting and tac knives (Buck, Benchmade) to my obnoxiously expensive Henckles set. I would strongly suggest, and I did this myself, find an older knife (or knives, sharpening a 3" paring is not the same as your 10" chef) to practice on and get to know how it cuts and and how much each stone will take off (or polish conversely). I personally like using a thinner painters tape with higher tack (3M 2020EL...from memory, the number may be slightly off).
    I don't do a lot of commenting on youtube, but I watched a few of the tree felling videos and then saw one about "selling out"....sigh.... so I had to see what sharpener you were "selling out" to. Low and behold, it is IMO, the best compact, portable, cost appropriate sharpener on the market, again, my opinion, but I have had mine for about three years and tell everyone I know about it.
    I am not yet a subscriber and anyone reading this can take it any way you want, but the reality is that anything with a blade needs to be maintained and this is an excellent way to do it. If you think that 5$ carbide drag sharpener you see at grocery store is a good deal only one of three things is the case, you buy a lot cheap knives, you are actively destroying your expensive knives, or you don't really know what sharp is. BTW, Cody signed (QC I would imagine) mine 10 of 2014 in what looks like silver paint pen.
    If you are looking for the best, do some research, much of it can be done on youtube, I'm not the only one that feels this way, and you will keep coming back to this product. Wranglestar, if this is you "selling out", well, this would be the way to do it. ok /diatribe

    This is an amazing jig. It works really well. I have been using it for a few years now and the benefit over freehand sharpening is consistency. Over and over, I have shown people what sharp really looks like. Ben knows more about sharpening than I ever will, but I disagree with him about diamonds. I have a few knives that are so crazy tough that the stones dish faster than the edge forms. I have to reflatten stones over and over just to get close. I switched to diamond films and emulsions and had is sharp in no time. I see no need to bother with diamonds for 95% of the knives people bring me.

    I do just about every step that is taught here except the permanent marker trick but I do it all by hand, by feel, and by sight. Not near as exact but as good as it gets for a common man on a retired meager budget! I noticed your edc in this video has a sheeps foot blade. My sons pooled together and bought me a model 555 Benchmade with a 154CM sheeps foot blade for my birthday. Wow, what a difference a good knife with a very hard blade (58-61rockwell) can make! It came hair-shaving sharp right out of the box!! It is without a doubt the best and most expensive knife I have ever owned! First thing I did was to put a tether on it!

    Hi Cody,
    To reshape a nicked axe try this, clamp head of axe flat side up. with 12" file lay tip of file on cheek (by handle)insert small wooden block and tape to file if necessary.
    Gloves are needed in this process, hold tip of file with one hand, then with the file handle do strokes much like the Pro that you have shown, equal strokes on each side. finish up using an axe stone.
    Best to you and yours

    I also have the EPA and as many others have stated, it is truly a fantastic system. That being said, some of the aftermarket additions offered by Mark Richmond of chefknivestogo.com really add to the performance of the machine. Little things like the table magnet, drill stop collar, and the quick change stone system work great and cost only a few dollars. The single biggest improvement, though is the higher end aftermarket stones. Chosera and Shapton both offer them, though I am only familiar with the Sharpton stones. They cut MUCH faster than the standard edge pro stones. In fact the 500 grit Shapton cuts much faster than the 220 e.p. stone. They are more of a true "splash and go" stone as they are much more dense and absorb significantly less water than the originals. Another big advantage is they are offered in much higher grit finishes. (I believe 16,000, but I'm not positive. 8k is plenty high enough for me.) Way better than the polishing tapes which are a hassle. If you prefer to use diamonds, Atoma also has their stones that fit the machine. The 120 Atoma will save you so much time and a little money in the long run if you plan on doing a lot of re-leveling. Obviously, the diamond doesn't wear away like the waterstones do so while it is expensive ($75), your lower grit waterstone will last way way longer since they aren't being used for the initial beveling. Sorry, kinda long winded but hope that helps anyone considering getting the system.

    I had to laugh at the electric can opener the look on Ben's face was priceless lol
    If I had lots of knives to sharpen I think I would buy one of those you can get repeat results every time. Guys that free hand would probably call bullshit on that machine until they use it hands on.
    It is like hand filing a chainsaw you will never get it to the same sharpness as it come out of the box.

    Both systems take a fair amount of skill at the tip, to keep from rolling off the edge, but you're right -- the Edgepro does require the off hand to keep steady pressure on the handle to ensure good contact with the table. I have demo'd a Wicked Edge and bought the Edgepro. Two reasons: Wicked Edge has a lot of angle variation on long blades due to the fixed position, and with the WE, you're locked into diamond media (bad, IMO). Also, the EPA gives more flexibility to an experienced hand.

    He's wrong on the 940, however. The studs are easily removeable, and had to be removed to reach the base of the sharpened edge. I also used the primary bevel to support the blade rather than the small parallel flat -- much more stable for this blade.

    I have the same DMT diamond sharpener I've had for 14 years. It is a medium. I bought because I bought a pocketknife that was so hard my Arkansas and India stones took forever to sharpen. For a medium edge it is still working good and has not pulled out any diamonds. It is a full sharpener, no holes and it has smoothed out some over the years. My diamond sharpener works just fine and I use a fine stone to finish a blade for real sharp, but my diamond is great for kitchen knives. I make knives and know a thing or two about how to sharpen one. I have an Arkansas black stone that will put a razor's edge on my wood cutting chisels. A razor edge is for wood carving, leather cutting or shaving, not for anything in the kitchen or hunting camp.

    You commented earlier about how we as a people are loosing ourselves in the world of Instead of taking pride in what we produce, sell and repair we simply throw away the old with disregard and buy new. I fear that this would be a part of the plan from the families controlling all the markets to make us a more pliable and therefore controllable society, so for you to live as you do and advertise is wonderful and uplifting for the older generation and hopefully inspiring to the newer generations.

    Cody, you can easily adjust the bevel angle of your hatchet on belt sander sharpening it in your pivoting way. Just take this self-made formula: Bev.Angle=2arctg(H/L) where H is height of hatchet plane of symmetry over grind surface measured vertically through pivot axis; whereas L is just a distance on the belt from pivot axis and outer point of touch between the edge and belt. Just simple way with no need to recombine those sophisticated space sharpeners;-)

    I've been hand sharpening for almost 20 years, and I have found that DMT diamond stones work the best for me. They stay flat, and with light pressure, they sharpen quickly but shed diamond slowly. Finish with a ceramic hone, and you have a razor edge in about five minutes total.

    Paper wheels are many layers of cardboard with abrasive mateial (like sandpaper) sandwiched together into a wheel that fits on a bench grinder. As the wheel wears away, fresh abrasive is revealed, much like a grinding wheel. Although, because they wear away faster, they build less heat than a grinding wheel, but the danger of overheating the edge still exists. Also, they apply a hollow ground edge, which is very fragile. Basically, they're a quick and dirty method -- not the best.

  • @TheApostleP
    @TheApostleP 11 лет назад

    Ben is absolutely right about diamond and steel. Not only will the steel, because it is so much softer than the diamond, grab the diamonds and remove them from the backing material, but the diamonds may also rip carbides out of the steel. Not a good thing either way.

    I am a metallurgical engineer. There are a ton of different steels for knives. I work for Republic Steel in Ohio and we can make 900 different grades of steel. The reason there are so many is that there are many different working environments and loading applications. Also some materials are designed with the manufacturing process in mind. When it comes knife blades, the material selection is done typically for application. Meaning hard steel for slicing, tougher steel for prying.

      Wood does the same thing, you just have to pay enough attention to what you're doing to be able to not only hear but feel, I honestly think its a skill a lot of people are missing out on because of how much the modern world is based off of getting things done as quickly as possible. Common sense indicates that taking your time and making sure each task is done right the first time would be more productive than half-assing it and having to come back later to do the job properly.

    The men and women that work in our main local industry have many different knives and they all need to sharpen their knives every morning, they use traditional sharpening stones and during small breaks in their work they resharpen their blades with rods. It takes time for people to learn how to but they can get their blades razor sharp in a short amount of time. I think thats pretty impressive considering they're using them 9 hours a day every day.

    I’ll tell you some info about diamond, and cutting steel. I have been a grinder, in a tool shop, where we cut carbide, and hardened steel. For hardened steel, you use CBN wheels. Why diamond doesn’t work on steel, has to do with carbon content in the diamond and the steel. I would be interested in whether CBN would be good for sharpening knives. But yes, steel heats up way too fast vs diamond. And the diamond pieces fall out almost immediate from its bond.

    I haven't tried the Edge Pro or the Wicked Edge. But I can't find anyone that has tried them both that says the Edge Pro is faster or does a better job than the Wicked Edge. The main problem with the Wicked Edge is cost. But it does seem to be faster and a fraction higher quality edge because the knife is locked into a fixed position assuring no change in the ange from 100 grit to 4000 grit. Edge pro seems to have some movement as seen by Cody as he was sharpening near the point of the knife.

    it would be awesome if they made a file set for the pro model. I've been having a hard time hand filing and have been thinking of making a filing jig. this product would make a great one.

    I love the adjust-ability of that sharpener. Looks like a great product! Thanks for the video. For my use though and a substantial cost savings the DMT Aligner works well for what I need. It can sharpen serrated blades too. I know it's diamond but I don't sharpen 100 knives a day. Come to think of it, I bet most people don't. If I had more money I'd probably check that one out though.

    +Wranglerstar, quick question. I know you have been talking quite a bit about sharpening tools such as chisels with your diamond plates. I'm sure you can't sharpen chisels on an Edge Pro, but would you still choose to use it for your pocket knives? Or are you confident enough sharpening by hand now?

    • @Joway76
      @Joway76 8 лет назад +1

      +Kyle Hughes You can sharpen chisels and many other tools according to the Edge Pro Website. This is an amazing tool. Eddie

      You actually CAN sharpen chisels on an Edgepro.

    I used to own a wicked edge but got rid of it because it was way too dangerous to operate. Clamping a knife, sticking it straight in the air, and running you knuckles past the blade . .. not a good idea. This is much safer and better for larger blades because you dont have to keep re-clamping it. Nice video I learned a lot

    another thing to think about is a "polished" edge is not always desirable, sometimes a more toothy edge is preferred, depending on the intended use of the knife.... if you need the knife to bite into the material... almost like micro serrations...

    Diamonds are just fine if you use them properly. This guy wants to sell more stones. If one uses a diamond plate with water and light pressure you can sharpen thousands of knives.
    Not to mention those stones in the video will not cut vanadium or chromium carbides in steel, thus diamonds win again, because after going so fine, those stones will cause carbide fall out.
    The edge pro is sweet and great for those who can't cut a consistent bevel by hand and/or don't have the time to learn the science behind sharpening. Doing things free-hand if one has a keen (pun intended) understanding works just fine for many as well though.
    My DMT plates are up to 8 years old and have seen many, many knives, and some used to flatten other sharpening stones. They cut just wonderfully.

      Maxwell Super exactly what I have experienced. I have the lansky diamond system and have done dozens of knives and they still cut great!

      Recently bought some DMT plates. They felt a lot coarser than I think they should have felt compared to my water stones of similar grit. Sharpened a hatchet with them first using glass cleaner as the lube then they started to feel like I would have expected them to. Is this normal?

    • @vodcc4463
      @vodcc4463 6 лет назад

      sgtish Yes that is normal, the really high grit plates from DMT are even "broken in" from the factory.

    Great Vid. I'm a wicked edge owner, I chose it because liked the idea of the knife being clamped. Moana1982, if your cutting your knuckles then your doing it very wrong!
    The edge pro also looks like a great bit of kit, I don't think I'd have been disappointed with it at all. Very interesting talk about the diamonds, its obvious they'll come away and I think its referred to as 'wearing in', I might have to look into getting some stone for my wicked edge.

    Have you ever read the book "the razor edge book of sharpening" by John Juranitch ?
    It's a good read, shows how to sharpen lots of things, does a double bit axe and how to shave with it!

    very cool! thank you for this! I have a dozen dull knives that I didn't really know how to sharpen correctly, so I've just been buying a new one to replace each, lol.
    I did try using both your average small sharpener as well as a steel, but not really knowing what I'm doing, it wasn't working too well!
