- Today we will be smoking a pork shoulder (AKA pork butt) using the low and slow method. I will be smoking this overnight at a temperature between 180-200 degrees, then upping the temperature to 250 degrees the next morning for the remainder of the smoke. As you will see in the video, this produces restaurant quality pulled pork. Enjoy!

If the smoker was set at 180 overnight, then why does it show the temperature at 207?
