📝 Ingredients for 2 Sandwiches:
🥩 For Marinated Chicken:
• 1 large chicken breast (halved and flattened)
• 🧄 Garlic powder - 1 tsp
• 🧅 Onion powder - 1 tsp
• 🌿 Thyme - 1 tsp
• 🌶 Red pepper flakes - ½ tsp
• 🌶 Paprika - 1 tsp
• 🧂 Salt - to taste
• 🫒 Olive oil
🥗 For Caesar Dressing:
• 🧄 Garlic - 4 to 5 cloves
• 🍶 Mayonnaise - 1 cup
• 🌟 Mustard - 1 tbsp
• 🍷 Balsamic vinegar - 1 tbsp
• 🍋 Juice of half a lemon
• 🧀 Parmesan cheese - 2 tbsp
• 🫒 Olive oil - 1 tbsp
• 🧂 Black pepper - to taste
🥣 For Batter & Panko Coating:
• All-purpose flour - 2 cups
• 🌶 Paprika - 1 tsp
• 🧅 Onion powder - 1 tsp
• 🧂 Salt & black pepper - 1 tsp each
• 🥖 Panko breadcrumbs
🥪 For Sandwich Assembly:
• 🥬 Lettuce
• 🍅 Tomato
• 🫒 Sliced olives
• 🧀 Cheddar cheese - 2 slices
• 🍞 Ciabatta bread or preferred bread
👩‍🍳 Instructions:
1️⃣ Marinate the Chicken:
Massage the chicken with garlic powder, onion powder, thyme, paprika, red pepper flakes, and salt. Let it rest in the fridge for 1 hour.
2️⃣ Prepare Batter & Panko Coating:
Mix flour with paprika, onion powder, salt, and black pepper. Coat the chicken in the batter, then roll it in panko breadcrumbs.
3️⃣ Bake the Chicken:
Place the chicken on a baking tray and bake at 180°C for 40-45 minutes. Add cheddar cheese slices on top in the last 10 minutes and let it melt.
4️⃣ Make the Caesar Dressing:
Mix mayonnaise, mustard, balsamic vinegar, lemon juice, Parmesan, olive oil, garlic, and black pepper until smooth.
5️⃣ Assemble the Sandwich:
Place the baked chicken in ciabatta bread. Add lettuce, Caesar dressing, tomato, and sliced olives. Serve and enjoy!
