The so-called "Japanese floor" is actually Chinese floor, that was how ancient Chinese sat and dined until a few hundred years ago. There are many old Chinese arts showing Chinese people sat on the floor at a low table while eating, drinking, chatting or reading. Much of the "Japanese" style and culture originated in China.
The diversity of Chinese cuisine is simply incredible! Every region brings its own unique flavors, ingredients, and cooking styles. It’s a never-ending adventure for the taste buds! 🍽🌏

Funny to talk about the Japanese floor in Changsha. I was in Changsha during the DIaoyudao protests in 2012. Many Japanese vehicles were tossed and smashed. The Japanese shops were looted. Hundreds of people were marching in the streets. The 武警 and millitary was called out to keep the peace. of course, I was fine. Everyone was so nice to me, but I am not Japanese. Anyway.... That was a long time ago and China is always nice to visit. Just funny that people in Changsha might choose something Japanese.
Crayfish is called mud bug in Louisiana. i had it once or twice here in the states, very little meat, fishy, and not worth the effort. Chinese has a way of making the inedible edible. LOL
