I lived and taught in the South both Hat Yai and Songkhla never had a problem with safety. We were warned of bomb threats from insurgents but this was rare and if your a tourist both cities are quite safe. Its a nice place to go on the way to Malaysia or even go to Koh Lipe island which is nice and less touristy.
Yes, good place for food and cheap shopping!! Its quite safe at night but don't walk in dark lane or street alone. I walked to 7 Eleven from hotel 10 mins near city area so it's safe at night.

Hatyai is part of Songkhla not a quite view but a lot of food
