This must have been a challenge, did you find a way to layer all the videos over each other and simply delete pieces as you go along rather than individually sticking them all together?

Yep for these kind of videos I just layer all the videos on the timeline, sync them and cut as i go along. I do that easily in Final Cut Pro X and I have layered up to 10 videos before on a computer with a 2012 i3 processor and no problem. What I am essentially doing is just multi-cam editing though, you should be able to do the same on other editor too if you don't have Final Cut.
