He is right. We should go back to the original recipe of pan de sal. Much like the Pan de Sal ni Pa-a, a family bakery in Iloilo City. It has existed before the war and has its own original recipe. The pan de sal is not sweet and goes perfectly paired with coffee!

Same with the "puto" that we have today, it's very different to the original puto. The puto today for me is not puto at all. Originally, puto is mainly made of powdered sticky rice. Now, the puto is just like other breads or cupcakes.

I rarely comment on videos but more than Jessica and the team's effort of putting out quality content like this, its ka-Chito's passion in his craft and genuine dedication to serve his country by proactively involving smaller farmers in his business that really inspired me the most. Philippines is primarily still an agricultural country, and these small scale farmers need us the most to continue their purpose of bringing in food to every Filipino's table. Cheers to Trabaho Series, Jessica!

Sir Chito is such an eloquent speaker, not pretentious at all, no fillers or unnecessary mannerisms, with the right pace and pauses so we can easily follow. But most of all, he speaks with passion, patriotism, and sincerity that can really make you want to start baking, not just for yourself but for our fellow Filipinos and the pride of the Philippines.
I've always wondered what business I'd want to start and now I'm thinking having a small bakery and cafe might just be the one! Imagine walking into the bakery every day, smelling the wonderful fresh bread and coffee, seeing customers relaxing and enjoying them. It doesn't matter if it's not a huge profit generator. It would be a simply joy and service to others.

this was such an in-depth and informative episode! I love how very eloquent Ka Chito was in speaking deep tagalog words. you can tell that he is really very passionate about his work by that long tagalog speech that he made during the chit-chat. I feel like the new season of the trabaho series really leveled up a lot. also, seeing you baking pan de sal made me remember when Song Jihyo of Running Man came to visit Manila for a tv-show where she visited the house of a little boy and after that she went and sold pan de sal on the streets :3

I lived for 9 yrs along Don Quijote Street while studying at UST for my college and professional degrees which was why Tinapayan had been an integral part of my psyche. It was really nice to see its evolution. The old granny (owner) used to watch customers from somewhere within the eatery or bakery back then, sometimes she helped out, too. Anyway, thank you for bringing forth fond memories. I truly enjoyed this amazing episode featuring the humble but tasty pandesal.

I am proud to have come from Cuenca Batangas, “The Home of the Bakers!”
I am equally blessed that I am a granddaughter of panaderos and as a toddler I lived in a house in Manila with a bakery downstairs.
My grandfather and grandmother were both panaderos and used to own bakeries in Manila including one that my grandfather and his brothers owned called “Comia Bros Bakery.”
Congratulations po, Tito Chito Lucito Chavez, our “Tinapay King” and President of the Asosasyon ng Panaderong Pilipino, for continuing our heritage and the legacy of being panaderos! I’m proud of what you have been achieving, for your dedication, and for continuously raising the flag of Cuenca Batangas.
Thank you, Jessica for being a panadero for a day! Well done 👍🏻!!! Aloha and watching you from Hawai’i, USA 🇺🇸🌺🌈🤙🏻🫰🏻🙏🏻

Hey, another good one from Jessica's Trabaho Series.
Featuring "Pan de Sal". I like the part where Ka-Chito mentioned actually bringing back to the original pandesal as we've consumed and enjoyed it back in the years when we will just fill it with peanut butter, condensed milk or even just dunk it in our coffee in the morning.
    Those are good times.
Thanks for featuring "Tinapayan." I haven't tried any of their products, but I guess this entity could rival Valerio's here in the U.S.

I once worked at a Pizza place in New Orleans many years ago. I worked for a day making Pizza crust and assembling Pizza boxes. I didn't go back, I didn't even collect my pay. It was hard work. It seems like its better to work for a bakery. Anyway Jessica seemed to take the baking part really well, I'm not sure if Jessica got all the deep tagalog history lesson from the owner auto translated in her brain realy quickly, she seemed baffled by the rapid succession of deep Tagalog words and looked lost in the translation, her eyes said it all. Thank you for the video though, It was good to watch.

I remember from back in the day, while stationed at Subic Naval Base as a young Marine, every libo day I would go to this little wooden shack right outside the main gate and buy two bags of fresh, hot just made pandesal! It was so good! I no bull-shit you! Then I would walk across the street to where there was this sweet beautiful Filipina and she would fry me up dalawa itlog just prefect, where the whites were all cooked, crispy edges and runny yolk. I probably should have married her instead of the other one. Oh well.
Word was, the secret ingredient to making that pandesal taste so good, is that they cooked it with the used fried chicken oil from on base. To this day, I have yet to find pandesal that taste as good.

Gusto ko ang dating lasa ng pandesal. Bagay na may palaman na kung ano may: keso, butter, peanut butter, atbp.

I also remembered back then when I was learning a bit of Spanish in school. I was eating pandesal and it's sweet, but isn't the name supposed to mean it's salty bread. He explained it so well that we shouldn't lose touch of the real recipe.
