Rugby refs get respect because they give it. They're consistent, hear the players out instead of yelling at them to go away or dismissing their concerns, and they calmly explain their decisions.
It's also instilled from the very start of a player's career. It's drilled into the youngest of players that the referee is right, even when he gets it wrong, his word is final. It's a tough lesson to have a penalty against you being moved 10m closer to your try line for arguing with the ref.

Player lead with the head and made contact with the head, making it an automatic red card for reckless play and player safety issues I think.
