Totally agree with the different forms of chocolate. It really provides such a richness. Are you familiar with sahleb? Italians have a hot chocolate version of that called ciocolato calda. Basically thickened with corn starch. Look it up and try it when it starts to get cold in a few months.
Just melt 2 small blocks of good quality dark chocolates in a hot milk cup. Best hot chocolate ever. Way better than the crap they sell at expensive coffee shops. No comparison!

Personal favourite hot choc base: equal parts cocoa powder and honey, mix until you have a lovely paste and no loose cocoa powder, then pour in hot milk/water in any ratio you like and stir. So good ❤
I use unsweetened soy milk, cacao powder, vanilla extract, stevia leaf extract and tiny pinch of salt (cinnamon optional) ☺️😋 sometimes I also use peppermint flavored stevia to make peppermint hot cocoa. This is sugar-free, all natural, excellent source of iron, magnesium & protein. And a little boost of caffeine from the raw cacao. 😋 Yours looks delicious!!
For one cup of my best hot chocolate, I melt about 50 grams of chocolate in a bit of milk, slowly, when it's melted into a ganache and I add cinnamon to taste, 3 tbsp of sugar, and a cup of half and half, and slowly heat up until hot. I use a foamer which helps make the half and half even smoother and creamer, then serve and top with a dusting of more cinnamon. You can use whatever blend of chocolates you enjoy best, and the sugar is to taste, so it isn't really necessary.

Worked at Christmas markets some years ago in Prague and made the hot chocolate you could buy from the vendors there. It was a mix of 35-40% fat content heavy cream, and a ratio of dark and milk chocolate. Not like chocolate bars, but the raw chocolate pucks which we had in 25kg sacks. If I remember correctly the ratios were similar to 50% cream, 30% milk choc, 20% dark choc (also depending on my taste, as I got to taste every batch I cooked and then "fine-tune") Ah how I miss those winters
Yes, a chocolate sauce is best. But two things: if you have vanilla syrup (one that you would have made with vanilla beans, separately) you can just add that (with maybe less sugar). Also, you don't need dusted chocolate for latte art?

Sure it’s potent and you don’t need a lot, but for a drink, adding a few drops won’t have any effect on the taste, especially in a very vibrant tasting drink like hot chocolate

We know about Italian hot chocolate,😊 we just don’t need it. Hot chocolate especially for kids is made full of sugar and marshmallows and it’s the nostalgia of such an experience that has adults drinking hot chocolate mixes with the thin watery chocolate shown in the first recipe. The average adult doesn’t often drink hot chocolate, they go for coffee or tea, and when they are feeling in the mood, a mocha, so unless you don’t drink coffee there isn’t a niche for fancy drinking chocolate as there is in Europe.

Also careful for thermal receipts (basically all receipts now if days) they have tons of BPA and your body absorbs a lot, especially if you sanitized or put lotion in recently before. I feel bad for all the store workers who would sanitize then pass receipts all day every day 😢

Also main difference is that hot chocolate is super thiccc and you eat it with a spoon, while hot cocoa you can easily slurp up.

I think you need dust it because there is no crema like in espresso

1 single serving:
1 cup milk
1 tablespoons unsweetened cocoa powder (using Cacao Barry cocoa powder - Extra Brute)

For me the best hot chocolate will always be the one with dark chocolate that you melt in simmering water with two cinnamon sticks.
I just use my espresso maker to do it up like a latte, tho tbf I was a barista for a few years.

I just toss a handful of M&Ms into a metal stovetop tea kettle and boil it with some milk. It works, as long as it doesn't foam over.
