Love love LOVE your doing it anyway and yes I always hesitate (4 years in both sourdough and Torah!!!) making my starter just to throw it out…but there is something quite natural and reminiscent of throwing out the ACTUAL leaven …

My sourdough starter is bubbly … but we have influenza B three weeks now with three boys and of course it’s my celiac child who’s home now so … I can’t do anything with grinding wheat berries when he’s here…
I decided not to do the GF starter yet because it’s way more involved…after Passover I’ll start the GF one!!!
Thanks for the encouragement to do it even if we have to toss it soon.
