The people in my house can't stop telling me how amazing these muffins are. I personally think the flavor and sweetness of the muffins are stronger once they've completely cooled down, which in my opinion, makes them taste better than when they're warm. One of the people in my house ate their 3rd one before bed! And two of the other people are on Weight Watchers and have had several, putting them over their points for the day. 😂 These muffins are irresistible. I'm a lil scared I'm addicted already. Lol. I made a pan of 12 and ate about 4 of them within the same day. 😭 Lol.
Thank so much for the recipe it tastes so much better than Starbuck's muffins! You can even swap out the type of oatmeal to use to make the muffins and add items and they still tastes great!
Holy cow! My house smells amazing! So I made these muffins gluten free and used almond milk and lemon juice instead of regular milk and lemon juice to make buttermilk. It called for a tad bit more liquid to supposedly be the same as 1 cup of buttermilk. So it took a little longer to bake since the batter was a bit more runny (2-3 min additional, with the stove off). They look and taste DELICIOUS!!!! I live in a house of 4 other people and have already been told not to eat anymore cause they want more for later :p. Needless to say...I will be making a second batch. LOL. THANK U SO MUCH FOR SHARIN THIS RECIPE!
@@SugarSpunRun So upon my second time making this awhiles back, I realized that I had added a cup of almond buttermilk instead of half a cup. Idk if u ever caught that but they still turned out delicious lol. I am #addicted. About to make it for the 4th time. 3rd was for a gift.
But of course you kept a few of the gift for yourself right?😂 they are really good muffins I have to refrain from making them so I don’t eat them all the time

Yup. The two temperature method is to give them the rise. The higher temperature helps them puff up nicely then you lower the temp to make sure they bake all the way through without burning. 😊
This is going to reveal my millennialism really bad, but is there a simplified version to making oatmeal muffins 😂 However, I will definitely use this next time I need to feed people for sure!
This is one of the rare muffin recipes that actually make the muffins moist and rich. Most are dry and almost cardboard tasting. One thing though, could I omit the oil and just add more butter or is the oil integral to making them moist?
Great question! The butter and oil combo is what really helps these with their moisture and flavor so I don’t recommend substituting all butter it will definitely dry them out a bit. 😊😊

You could always use my buttermilk substitute! Pour 1 Tbsp of lemon juice or vinegar into a measuring cup, and then fill the rest of the way to the “1 cup” line. For a more detailed explanation, read my blog post! 😊

Sorry I missed this one. You can stir them in when the flour is about completely combined. You should be able to use about a cup. 😊😊

Chopped apples would probably work. I would use probably 1-1.5 cups of peeled and chopped apples. 😊
