고들빼기는 가을에 수확하고 남은 것은 겨울에 지상부에 있는 것들은 없어지지만 뿌리는 살아 있어 봄에 싹이 나온다
어느 정도 자란 싹은 수확하고 일부를 그냥 두면 기온이 높으면 꽃대가 나오고 수정이 되면 그 것을 채집하여 다시 심는다.
