    Autumn is coming soon in Japan. Summer in Japan is very hot, so I'm glad it's cooler.😊
    But it's a bit of a shame that I won't be able to eat summer vegetables.
    So today we're going to have a party using lots of that!✨With beer and Sake. It is a Japanese “Izakaya" style.
    We had so much fun and had a wonderful holiday.
    I'll give you the general recipe.
    I've listed what I've made by eye, so when you make it, please prepare it while tasting it.
    [Egg Tofu with Togan sauce]
    *Egg tofu
    3 eggs
    150ml Dashi stock
    A little salt
    *Togan sauce
    Togan (seeds and skin removed) 500g
    200ml Dashi stock
    4 tbsp soy sauce
    2 tbsp Mirin
    →Transfer about 2 cups in a ladle to another pot and thicken with water-soluble potato starch.
    →Use the leftovers for soba noodles the next day.
    [Grilled summer vegetables and Japanese mushroom with Dashi soup]
    3 eggplants
    as much as you like Shishito peppers
    1 Hiratake
    300ml Dashi stock
    1 tsp Yuzu pepper
    1 tsp soy sauce
    1 tsp sugar
    2 pinches salt
    [Sakiika and pepper tempura]
    As much as you like Sakiika (Japanese dried and seasoned squid)
    As much as you like Shishito peppers
    Appropriate amount Tempura powder
    Appropriate amount water
    [Japanese apple ginger pork]
    200g thinly sliced pork belly
    1/2 onion
    1/2 apple
    2 pieces ginger
    2 cloves garlic
    4 tbsp Sake
    3 tbsp soy sauce
    [Watermelon sherbet]
    Watermelon (crushed) 300ml
    2 tbsp oligosaccharide
    1 handful of chocolate chips
    [Soba noodles with Togan soup]
    2 servings Soba
    All leftovers from making the Togan sauce
    50ml Mirin
    3 tbsp Sake
    3 tbsp soy sauce
    [Dressed kelp and Togan]
    1/8 Togan
    A little salt
    1 handful salted kelp
    2g bonito flakes
    A little soy sauce
    [Stir-fried eggplant and shishito pepper with sesame miso]
    2 eggplants
    10-15 shishito peppers
    1/2 tbsp Miso
    2 tbsp Sake
    1 tbsp Mirin
    1 tbsp sugar
    1/2 tbsp oyster sauce
    1 tbsp soy sauce
    8g ground sesame seeds
    Appropriate amount. sesame oil
