"There's always time for a cocktail" - Kasha Davis
Are you supposed to mix it up after presentation? It seems like you would be getting nearly straight rum until you got the drink more horizontal. Better served in a highball glass where that is less of an issue? I need to get this book. Everything has sounded great so far.
You would mix it before drinking I assume. That’s what I do at least.
yeah you should mix it. in fact some bartenders will not bother with floating the rum in the first place. if you drink it unmixed, you will get pure rum and then pure ginger beer, wich is pointless. If you just use a straw, it's the other way around.
I believe this drink is technically supposed to be served in a highball glass (according to the Goslings trademark), but I usually just mix it.
I make a similar cocktail that I named "The LaFitte" ("lah-FEET") after the only red-haired ("ginger") pirate to prowl the Caribbean. It's made with your favorite gingerale (I avoid ginger beer just because the hot spicy snap mentioned in the video), about halfway up the same type of cocktail/juice glass as seen in the video with 3 ice cubes, a jigger (1.5oz) of Pusser's rum.
Pusser's Rum the reason Great Britain took and held the British Virgin Isles: For the sugar cane to make Pusser's exclusively for the Royal Navy for the daily "tot" of "grog", a pint of rum and water, a practice that held through the 18th Century until 1973 when the tot was discontinued and grown men openly wept. I was told the story by a colleague who is a former Royal Navy sailor who was serving in '73 while he introduced me to Pusser's. I spent 2 weeks sailing around BVI with my wife and was in Rumulan Nirvana in the home of my favorite rum. But I digress - back to the recipe...
So:
1 tall 12-ounce (355 ml) cocktail/juice glass with 3 ice cubes;
8 oz (237 ml) your favorite gingerale;
1 jigger (1.5oz or 44 ml) Pusser's Rum;
A healthy squeeze or about 1oz (30 ml) of fresh unsweetened lime juice;
Float about 0.5-1oz (15-30 ml) of your favorite blackstrap rum on top;
Serve with a slice of lime and pineapple on the rim for garnish.

Sounds good! Like the rum mixed w the the ginger ale but the 'seasoning' black strap rum on top.

@@acbeaumo Goslings trademarked the name "dark and stormy" so if they had put in any other type of rum they would've had to change the name or else risk a lawsuit
@@magic2174 I had no idea Dark and Stormy was trademarked. With that being the case, it seems pretty dishonest by America's Test Kitchen to avoid mentioning the clear conflict of interest in selecting their "favorite" dark rum. It essentially means this video is a covert advertisement for Goslings.

Great video, the ginger syrup looks amazing!
I dont drink but the recipie for the ginger syrip was worth the time.
I also don't drink but love the art of cocktail making and can find many flavor combos I end up wanting to experiment with cooking or baking and even new little recipes like the ginger syrup.
For example, the molasses based rum and ginger syrup make me think of gingerbread cookies. Could be fun to play with that idea and a basic gingerbread recipe idea to make something new, like maybe a cake or cupcake inspired by a dark and stormy.
I want to try it by simply juicing the raw ginger and adding it to the simple syrup afterward. I know cooking fresh ginger takes it down a notch. I'm curious as to the difference in potency between raw and cooked.
I tried the ginger syrup... It IS really potent. The strongest I ever did so far

Goslings has trademarked the dark and stormy, and it requires their specific rum. FFT.
Oh that sounds pretty good. I tried a 'Dark and Stormy' using commercial ginger beer (and admittedly a lesser rum) and wasn't too impressed by the ginger flavor. This homemade syrup should really improve that.

Very complicated way of doing it. Traditionally, just Barritts stone ground Ginger Beer and Black Seal, with ice. Job done. It doesn't need fancy ginger beer.

This IS America's Test Kitchen... Are you familiar with them? They tend to aim towards perfection with their recipes. And that recipe is very ginger forward (don't know if that makes sense in English) 🤷🏾♂️

@@josephgitter Such a tremendous combination. It's a shame so few bars have absinthe behind the bar, so I often end up with an Old Fashioned instead. Best Sazerac I've ever had was at the Skyfall Lounge in Vegas.
That is a great looking cocktail and I would have enjoyed drinking it when I was drinking and was devouring drinks like the Pina Colada and a few others which appealed to me.
Dark is the Black rum and stormy means ginger syrup with seltzer !!!! spicy and healthy .
Fermenting a ginger syrup into an alcohol would maybe be a nice bump for this amazing drink.
Also I feel Dark and stormies are always better at a beach bar.
Only thing the video leaves out is how much simple syrup is the ginger added to. Otherwise I would try to make it. ATK, could you answer this?

True ginger beer is made using 'ginger beer plant' - a bacterial/yeast combo similar to kefir in which the yeast ferments the ginger and sugar but the bacteria feed off the alcohol, which stops the yeast from dying and limits the booziness of the finished product.
Also - yeah we all know why you _'chose to settle'_ on Goslings...

Almost certainly by weight.
What is the shelf life of the finished ginger syrup?
Kept refrigerated, it should be good for several weeks (2 for sure, 4 probably, maybe longer - I've kept plain and lemon syrups in my fridge for months without a problem).
How many senior editors do they have?? Does that title even mean anything now?

You settled on Goslings because Dark and Stormy is a trademarked name by Goslings. Be honest. So using another rhum would have required a different name.

Is ginger beer the same thing as ginger ale ?
No. Proper ginger beer is fermented and very slightly alcoholic (about 0.5% alcohol). Commercial ginger beers are usually formulated to have a stronger ginger flavor than ginger ale - but still nothing close to this!
Random observation, but the background music sounds almost like Los Lobos' version of "Colas".
Why did they use lemon juice in the ginger syrup but a squeeze if lime juice at the end?
the lemon is a preservative in the syrup, whereas the lime juice is a key ingredient in any Dark n Stormy. But yeah I can see why it seems weird.
I assume one is supposed to stir the rum down into the drink before sipping, when one is not in front of a video camera?

This takes way more planning that it should to make a cocktail. And causes way too many dishes to need washed. Let's try making it with ginger beer from the store.
