How to make a delicious Dark & Stormy - My Way!

  • A deliciously rich and spicy blend of ginger, rum & lime. There are many variations on this simple combination, but this is the way I like to make it and it's one of our biggest sellers on the Bomba Rooftop.
    SPECS:
    60ml (2oz) dark rum
    30ml (1oz) fresh lime juice
    About 120ml (4oz) ginger beer
    3 dashes Angostura bitters
    Lime wheels to garnish
    EQUIPMENT:
    A jigger
    A barspoon
    A highball glass
    METHOD:
    Add your rum and lime juice, and ginger beer to the glass (should be just under halfway) Add as much ice as you can fit, stir, add more ice and top with more ginger beer if necessary. Float 3 dashes of bitters on top, garnish with lime wheels and enjoy!

    I've started making sure I have my garnish done first because of this channel.
    I really appreciate that Cara focuses on the actual hospitality aspect of bartending.
    I also like how, even though she talks about the history, she focuses on the drink making. Instead of rambling or lecturing like some other cocktail channels.
    This is my favorite cocktail channel at this point.

    I used to visit Bermuda for work a lot. For three years I went there every other month for one week. Truly a beautiful place with great people...and two great drinks. This and the Swizzle. I prefer this one. I had many a happy hour at The Hog Penny restaurant and pub in Hamilton as I walked to my hotel from work. I live overseas now and have to make my own ginger beer and can't get Goslings so...I use Jameson and call it an Irish Storm. Ginger Beer and about anything is great.
    One trip to Hamilton sticks out regarding this drink. Well, two trips stick out but I will only tell about one (I don't remember much from that St Patricks Day). A bartender at the Hog Penny had me try it with lemon instead. He felt that it was better that way. It is worth a try. I prefer limes (and they are much easier to get where I have lived since then...limes are EVERYWHERE it seems- lemons...not as much) but the lemon is a nice change.

    Wonderful cocktail. Built in glass for a tasty quick backyard cocktail. Like the idea of adding a layer of dark bitters !

    Hi from Bermuda and thanks for making one of our national drinks! Our by-the-book local tradition calls Barritt's Ginger Beer, though its not widely available internationally the way Gosling's (or another brand) ginger beer is. I love the angostura floater on top. It does look nice and if you use a rum floater on top, like bars do here, it looks like an Atlantic storm raining down on the ocean. Thank you for featuring the Dark n Stormy and I'd love to see you guys try our other national drink, The Rum Swizzle.

    My dad served one to me recently using Cruzan Blackstrap Rum. Enjoyed it enough to go out and pick some up just so I could make it at home. I will need to look for the Gosling now.

    Goslings makes their own Ginger beer as well. It’s pretty hot on the ginger spice level.
    Traditionally, the rum should be floated. I prefer that presentation, but I mix it when I drink it. Kraken Black Rum makes a very dramatic looking cocktail. I prefer Myers dark rum though, it’s more funky and less spiced.
    If you add pineapple juice, you have a Bermuda Triangle... drink a couple of those and you won’t know where you are. 😉

      ... it will make a true D&S ... remember lime juice as well garnish ... it makes the “Swirl’s” in the storm ... plan on 2 drinks per can ...

    Agreed that Fever Tree is the best. Between that and using Kraken 94 proof for the rum, I love the spicy burning sensation my lips get. Never tried the angostura though, thanks for the suggestion!

    Got into these a few years ago on a boys weekend. A mate who does some work in Bermuda introduced the crew to The Kraken and Bundeburg ginger beer and I’ve never looked back. Yes a bit on the sweet side but a nice change up from a day on the ales. I did get into the Bundeburg Christmas edition ginger beer for a mouth full of fruitcake flavour. Now making my own ginger beer in iso.

    A local bittery makes a grapefruit, rosemary, and peppercorn bitter... which goes beautifully in it!

    Fellow Melburnian cocktail slingers at the Everleigh also make a Dark and Hoppy which I really like. They trade the ginger beer for ginger syrup and top it up with IPA. A really nice beer cocktail 🍹

      I think the same way a lot of people think in colours, I think in textures- chewy, fluffy, spiky etc haha. I mean this is actually quite thick in body, but also has that toffee/molasses note that makes your feel like you should chew it!

    Most cocktails with ginger beer just taste like ginger beer, this one has a bit more balance between the rum and ginger beer. Great summer drink, although I’m having one now in middle of winter.

    Your using a conical Pilsner glass here, has upped my game.
    I've tried a number of ginger beers/syrups; Fever Tree for the win for a while: 1.5z Gosling's, 0.5z Smith and Cross, more stormy. Iirc, there's no lime in a "real" Dark and Stormy, I've been compromising with Fee Bros. lime bitters.

      You can definitely knock back the lime juice and/or use a sweeter ginger beer. Even add a little agave syrup or something like that!

    I have also a superbasic question, when you use ginger beer, is that with or without alcohol?

      Thank you so much for the kind words Sven! I think bar tending is the same as everything else in life- it’s important to learn your basics, but rules are made to be broken and the original is not always the best!
      Without alcohol for the ginger beer. I did have one guy ordering it with alcoholic ginger beer at the bar once and I cut him off after 2- that’s a one way ticket to vomit town in my opinion! And just doesn’t taste as nice because alcoholic ginger beers are usually quite sweet.

My bestie got a rum tasting glass (Final Touch, I think?) recently and it's -incredible- how it totally transforms a rum, and I'm sure thousands of whisky drinkers have waxed poetic on the potence of a good glencairn.

    I always treat the D&S as a Moscow Mule but with rum, any dark rum seems to work well and for making at home, when I'm really lazy, I'll just do a full 200 ml Fever Tree Ginger beer, the juice of half a lime (in my experience works out to about 15-20 ml), not as much ice as in a bar, because this imo doesn't need much dilution, then I proceed to eyeball the rum as a float - I've definitely made some mistakes like making one in a pint glass and putting in close to 100 ml rum but that's home bartending for you haha, live and learn.       It definitely doesn’t have to be, it’s one of those drinks that can easily be adjusted down. I just figure that when people order cocktails they expect them to be a double. If I was drinking at home I’d probably do 30 or 45ml in a smaller glass 😊

    I’ve only been making these for a few months and tried a few variations, some only garnished with lime. I don’t understand that, especially with the Navy connection...scurvy & all that! The lime juice makes it, I think. Angostura on top sounds good, must try that.

      I guess my cocktail bartender brain says if you’re only going to garnish with lime then it’s just a highball haha. The bitters are definitely not traditional but they look pretty and add spice and length so why not!

      That has a lot to do with the ginger beer. Use either Fever Tree or Q. They're less sweet and spicier than the run-of-the-mill crap. The wrong rum won't help either. If Myers is all you have I suppose you can use it, but it always adds a sweet burnt-molasses note for me.

      Yeah definitely all about a good ginger beer and healthy dose of rum. It’s also why I add the bitters which isn’t traditional- that extra spice, and really helps give it length imo. Hope you like this version!

    I want your glassware! So nice. I am NOT a fan of Goslings rum, but it does work really well and is the go-to in the Dark 'n' Stormy
    . Other things, not so much. Do you have Bundaberg ginger beer where you are? Yum. Can't call it a Dark 'n' Stormy (tm) I guess without the Goslings GInger Beer. Ha.

    Amazing channel! It's very refreshing to see a woman running a cocktail channel, and in a very charming way too. I've been binging your videos for the most part of this evening and was left with one question in particular: your jigger.     Hi Cara, just found your channel and find it highly enjoyable and informative. What are your thoughts on using an alcoholic ginger beer? I find there are some nice ones out there with varying spice (Matso's from Broome W.A. is my preference) that give the drink an additional kick whilst still staying very drinkable. Also is there any possibility of a video focusing on Australia's craft spirits variety?

      I’m not honestly a massive fan of using alcoholic ginger beers in cocktails just because I don’t think the extra alcohol is necessary! But there are certainly some yummy ones now. I often use Australian craft spirits and would love to cover more- our ideal would be to get out and about and visit some distilleries!

    My (former) brother-in-law's go-to. When he was behind the bar, he'd shake a couple drops of orange bitters onto the ice before adding the Gosling's or Fevertree. More than one way to "skin a cat."

    Goslings Black Seal. Also available, but not on hand. However, there's a bottle of Appleton lurking apologetically in my liquor cabinet. Check.

      Honestly this is a pretty forgiving drink so you can get away with most rums but as a general rule the heavier the better- something like Myer’s, Appleton’s etc.

      That’s a shame! There are lots of awesome soft drinks on the market now so maybe you could find something you do like which is also fairly dry and zingy/spicy? I’ve had some great grapefruit sodas recently (Strangelove has a salted grapefruit one which is delicious) and that could definitely work! You may want to use a less intense rum though.

    So, when you say "Ginger Beer" is this the sort of Ginger Beer that we would drink on the islands (by which I mean for example Jamaica), or is "Ginger Beer" simply a generic British/Irish/UK term for what in America is often referred to as "Ginger Ale" (of which Seagram's or Canada Dry would be top examples)?

      I mean actual ginger beer! In the UK and Australia most bars will have both ginger ale and ginger beer. This drink definitely needs the spice.

    Traditional DarknStormy does not call for lime juice or bitters....ginger beer goes in first and float the Goslings on top. Line wedge optional.

    I've been messing with Domaine de Canton for stuff like this, since i don't always have GingerBeer lying around. (like the EL-DIABLO)

      Ooh yeah it would be...would you have access to soda water? Even just a splash of that, as I think having the carbonation really helps make the drink refreshing too.

      It’s a pretty interesting issue, Diffords has a good article on it if you’re interested:

      Basically you can’t copyright a drink, just a name. So you can combine any rum and ginger beer you like but you can’t call it a Dark & Stormy. Although funnily enough TIL that actually they missed Australia, so here the ‘Dark N Stormy’ is owner by Bundaberg- hope they don’t come after us haha!

    $20.00 for a Dark & Stormy? Holy crap! I could almost buy a bottle Plantation Dark or 3 Star for the cost of that one mixed drink. Or for the cost of two of those I could get a bottle of Plantation 5 Year. Australia needs to reevaluate it's liquor taxes.

      Yup! The only thing I’d say is that on average wages are higher here, but cocktails are close to an hour’s work if you’re on minimum wage. Keeps them a treat I suppose! And of course it’s cheaper to buy a bottle yourself and just drink at home here too, but it’s not the same as having them made for you (lockdown has taught me that haha!).

      @@BehindtheBar I hope you'll forgive me. I live in the United States where the liquor laws are much more relaxed. I definitely see what you mean though. The high price makes it feel like more of an event. I feel good about my home recipe though. It is essentially the exact same as the one you demonstrated, but I prefer Bundaberg ginger beer, and I don't add bitters (but I might start, it sounds tasty.)

    Uhhh... Did you just say $20 for a Dark and Stormy?? W.T.F. The place I used to tend bar at had a dark and stormy special for $6 on Thursdays. Normal price was $8. And yeah, that was a "proper" strength dark and stormy with Goslings and decent ginger beer. The better deal imo was a decent stirred Manhattan with Overholt Rye and Dolin vermouth for $6 on Fridays. Is this $20 Dark and Stormy price a crazy Australian thing? Is Goslings really hard to get and expensive there?

      $20 for cocktails is very standard in Australia. The tax on alcohol is stupidly high and also due to all the alcohol licensing that bars have to pay.

      As redude77 said! Obviously you have the exchange rate so our $20 is American $14 or so. Then it’s mostly about taxes. It’s also why we don’t have as many bottom shelf products - alcohol is taxed by abv, not by value, so why would you bother bringing in or producing really cheap booze and then paying a heap of tax on it. So my rail is Plantation Dark, Johnny Walker Black etc, and everything sits at $10 for a standard drink, so cocktails are generally at least double that if they contain a full two shots.

    I am surprised that you include lime juice. Wouldn't that rather be a Rum buck? I mean, I personally find the Dark'n'Stormy classic recipe too sweet, so I welcome the lime, but as far as I know, only a lime wedge is part of the classic - as a garnish.

      Haha we did deliberately call it ‘Dark & Stormy - My Way’ because we knew these sorts of questions would come up! You’re right, technically lime juice isn’t needed to make a D&S. It can just be a straight highball, but I find it a much more balanced and interesting drink with it. So I don’t really see the point in sending out a drink that’s not as good because someone asked for a D&S and not a Buck because the first is so much more well know, you know? I think as long as someone puts a delicious combination of rum, ginger beer and lime in front of them they’ll be happy, and that’s what we’re there for!

      I mean considering it’s just a highball cocktail I would say ‘totally wrong’ is overstating the mark a little haha, but I also explain in the video that I wanted to use this glass cause I love it and haven’t had a chance yet- drinks taste best out of the glass you like 😉
