Let me show you how to cook Dal Fry, a delicious Indian dish made with lentils tempered with aromatics, spices, and curry leaves.

Indian-Style Rice🍃🍃🍃
(makes about 6 cups cooked rice)
2 cups Basmati Rice, white
2 cups Water
1 tsp Turmeric
1 tsp Cumin Seeds
1 small Cinnamon Stick
5 Green Cardamom pods
2 tsp Salt
3 mins in the Instant Pot high pressure, then let sit on low with the lid on (natural release) 15 minutes. Then, remove lid and fluff rice.

2 cups Toor Dal (Split Pigeon Peas)
4 1/2 cups water
1/2 tbsp Turmeric
2 tsp Salt
Set aside.
Then, heat a large pan and temper the Dal to give it tons of flavor.
2 tsp Black Mustard Seeds
2 tsp Cumin Seeds
1 1/2 cups Onions, chopped
6-8 Dried Kashmiri Red Chili (depending on spice preference)
5 tbsp Garlic, minced
1 1/2 tbsp Ginger, minced
0-2 Green Chilis, sliced (depending on spice preference)
2 sprigs Curry Leaves
1 cup Tomato, diced or 1 tbsp Tomato Paste
1/2 tsp Turmeric Powder
2 tsp Red Chili Powder (for mild use 1 1/2 tsp)
1 tsp Garam Masala (for mild use 3/4 tsp)
2 small pinches Hing, also called Asofoetida
1 1/2 cups Water
Cooked Toor Dal
4 tsp dried Fenugreek Leaves, also called Methi
1/2 tsp Black Pepper
2 tsp Salt
3 cups Spinach
1/2 cup Cilantro, chopped
1/2 Lime, juiced
Note: I made this Indian spicy. Which is very spicy. If you don't like the spice please use the measurements I have included for mild.
Note: For best presentation, I recommend using a whole diced tomato because tomato paste may give the Dal more of an orange color rather than the classic yellow Dal Fry. Next time I make it, I will make this adjustment. Flavor-wise, it will taste great either way.
