Instant Pot Kung Pao Chicken

Kung Pao Chicken is a staple Chinese dish found at basically every restaurant, but every one of them does it up a little differently. While it normally features a brown sauce with a peanut flair and spicy kick, I've had Kung Paos that were mild instead of spicy, more sweet than savory and the reverse. Every Chinese restaurant also seems to have their own special vegetable touches to add to the mix. So, basically, there's no one proper way to make this dish.
Enter the Instant Pot and Jewish Jeffrey's spin on it. I wanted the sauce to strike an even balance between sweet & savory and spicy & mild with a gravy-like consistency so it clings to the chicken. I wanted there to be lots of sauce to drape over rice. And I also wanted it to have a hint of peanut flavor IN the sauce since this dish is typically covered in peanuts. Unconventional with fork-lickin' fortune!

I made this last week. You knocked it out of the park again, Jeff. I made it a pot-in-pot recipe and coincidentally, the rice turned out to be the best, most fluffy rice I've ever made. It went perfectly with the Kung Pao!

I made this recipe last evening. I followed it exactly, but using the suggested substitutions for the black vinegar and Shaoxing wine. The result was fabulous: tender chicken and a sauce to die for. This is maybe the best of your recipes so far...a real keeper. Thanks so much!

L my daughter is a junior in high school this year.
For the first term which is just about ready to end, she has been taking a culinary class and loves it!
I have been teaching her how to cook since she was five… And we’ve been working on planning a meal and shopping for groceries and all that kind of fun stuff over the summer. Her final project in her culinary class was to pick a recipe of her choosing and prepare it at home.
She had to write down all the steps and document it with pictures and everything and this is the recipe she chose.
This past weekend she went to the store and purchased all of the things she would need to make this dish and last night she made the dish… It turned out really good! Except she says she likes the way I make it better even though we have both followed this exact same recipe… I’m guessing the reason mine tastes better is because I’m the one having to do the work and she just gets to sit around and enjoy the rewards anyways, thank you for making cooking a little less intimidating the way you present things is awesome thank you thank you thank you
I might add she was a bit hesitant to adopt the Insta pot, but I use it several times a week to make things and now that she’s tried it she actually likes it

I made a double recipe of this yesterday and every bit was eaten up. I got some really nice compliments and it was said more than once that it was restaurant quality. I used balsamic vinegar and cooking sherry as the substitute ingredients. I wouldn’t do it any different next time.

Finally getting my own kitchen again (long story) and bring on the Instant Pots! I get to go over your techy videos as I need to decide sizes and models. At the moment, I’m looking at an 8 quart for meat ( I want to be able to do brisket or chicken) and a 3 for dairy and a 3 for Parve. I’ll start with the meat and go from there. And yes, I would love a cookbook!

Made this finally today... 2# chicken, balsamic and a good sherry because that's what I had (I mean, in addition to the other listed ingredients.) WONDERFUL! I love it! With just a half a TBSP of the chili sauce it really isn't spicy but does have just a touch of heat...which is perfect for feeding to my kids. Served over white rice. A winner!

Made this recipe tonight. Delicious!!!! The only thing I would change would be that I like my peppers crunchy and they came out soft. I will try to put them in later next time during the cooking process.

Recently I purchased a Foodi cookbook but I am not too impressed. Do you have any plans on making a cookbook? I honestly feel you are the only authentic person who makes dinners worthy of my time. Also, I don’t feel you ‘short’’ an ingredient or give off measurements like others.

Today is 8 November 2022: I’m stressing out over the elections… And I’ve been routed to my seat for far too long after walking the dog I’m going to get up and make this now for our dinner so my kids will have something good to eat before they go to their old district orchestra concert this evening. PS, I’m glad that your cookbooks are available from the Library of Congress talking book program. I’m visually impaired and find it very easy to follow the books and also follow your instructions here on the RUclips. You explain things very well in both medias.

I've always heard it's best not to use cooking wine or sherry. Better to use something you would like to drink. Could we use a Marsala wine or a red wine instead?

Exactly!!! Nobody likes a Grammar Nazi. Be nice. And I have a 6 and 8 qt. Looking back, I wish I only bought the 8 qt. I cook for me and one other person, and the 8 qt comes in handier. The 6 qt is okay, but I make ahead and freeze.

Sorry I'm super confused, where's the Szechuan pepper/spices/heat you mention in the intro?
The garlic chili sauce was the ingredient he said is spicy. I have no idea if it is spicy or not.
@@lifewithpugwinkle that sauce is rather mild (especially in the ratio he used) and not at all Chinese, thus my confusion.
@@chrissymorin I agree it would be very mild. It seems a lot of people just can't handle the heat from spices. Personally for us the more the better.

Actually the roasted sesame oil is the way to go. Favorite is Kadoya brand. Plain clear Sesame oil has no flavor.
I don’t eat meat or chicken, but I’m going to make this and just sub extra firm tofu, or chickpeas, for the chicken. :)

It's not kung pao chicken unless it has the dried red chilies also it really needs to be flash-fried like in a wok all the vegetables should really be crunchy and the color still a very vibrant and not a lot of excess liquid

I never eat a “soupy” Kung Pao Chicken 😀. I will try it BUT have to reduce the water 😀
